Brined for 18 hours. Put in the smoker at 225 degrees with chunks of hickory and beer in the liquid pan until interior temperature was 135 degrees. Very tender and juicy.https://uploads.tapatalk-cdn.com/20201206/0fed60ea4be47f684f71f622f0ab0dd6.jpg

1/2 cup canning salt, 1/2 cup + apple cider vinegar, 1 gallon water, garlic powder, fresh ground pepper, and dehydrated onions all to taste.

Is canning salt the same as kosher salt ?

Is canning salt the same as kosher salt ?No iodine. Kosher salt would be fine. Lots of brine recipes on line. I just halved a 2 gallon recipe and ad libbed a little.

Canning salt is pure salt, kosher has an additive to keep it free flowing... Kosher can cloud pickles, in a brine it should be fine.
