View Full Version : Spicy Pickled Eggs

Hi all,
I mentioned on Boaz's Shelter in place diet post (http://castboolits.gunloads.com/showthread.php?401368-Shelter-in-place-diet-!) about making pickled eggs, and was asked about the recipe, so I thought I'd post it here. This is how I do it, and the recipe is easy to tweak to your own tastes and availability of items so be creative and experiment.



EQUIPMENT:
2 qt saucepan (or larger)
3 1-quart mason jars w/lids and rings





INGREDIENTS:

Hot pickling liquid:

2 cups white vinegar
1 cup apple cider vinegar
3 cups water
1 tbsp minced garlic or 6 garlic cloves crushed
1 tbsp sea salt or Kosher salt
2 tbsp pickling spice (I use Kroger)
2 tsp River Valley Hot sauce
1 tbsp Mexene Chili powder
1-1/2 tsp Morton Nature's Season salt

For the jars (split three ways):

24 peeled hard boiled eggs
3 tsp whole peppercorns
3 tsp minced garlic (or 6 garlic cloves crushed)
3/4 tsp crushed red pepper (or 3 packets of pizza place pepper)
1/2 onion sliced thin (split three ways)
3 plump green jalapeņo peppers (1/4" medallions or julienne sliced)(seeded or not)
3 plump red Fresno peppers (1/4" medallions or julienne sliced)(seeded or not)


PROCESS:

In each thoroughly cleaned jar, arrange 8 eggs, pepper slices, peppercorns, garlic and onion.
Mix hot pickling ingredients in sauce pan and bring to just boiling
Stir mixture constantly and pour gently into each jar almost to the top (you can spoon the remaining chunkies into each jar)
Place the lids on each jar and screw on ring, as the liquid cools, it should pull the lid down.
Once the jars have cooled to room temperature, tighten ring and shake the jars to thoroughly mix the contents and put in refrigerator
Your eggs should be ready in a week to ten days and will last quite a while in the fridge, getting better with age

NOTE: This is not the same as hot canning, so I recommend keeping these refrigerated.

Hi Matt,
I think you'll like them. When combined with good beer(s), the taste is heavenly, but on the downside, it takes "SBD" to a whole new level! So, maybe your wife has reason to be unhappy.

Yup, I make a gallon of pickled eggs from time to time and she would like to kill me rather than live with me. Kids just laugh and howl.

My kids like them to,the wife not so much. She usually leaves the room when I eat them. I am like that with liver and onions. When I make them I usually leave them sit for a couple of weeks then slowly drain 3/4 of the vinegar out and add fresh. I like the stronger vinegar taste. I use the crushed garlic, white vinegar, crushed hot peppers Seads, crushed black pepper, and salt in my pickled eggs. For my pickled eggs. For some reason I don’t like the apple cider vinegar in my pickled eggs. It makes them sweet

I normally would use eggs, apple vineger, hot peppers, dill, cucumbers, onions, pickle spice and what ever else strikes my fancy.

I use Shotgun Reds recipe for pickled hotdogs. The vinegar recipe works with
eggs too. I'll try your recipe the next time I make pickled eggs. As I like to
try different recipes. Cooking with Shotgun Red on youtube.

Hi,
I agree. the next time I'm going to have to really up the peppers as i think the vinegar kills a lot of the heat. They still taste really good, just no heat.

I will add another option, 36 boiled eggs a jar of jalapeno slices, 12oz, a can of sliced beets, 1 big purple onion all in a one gallon glass jar. Slice the onion to 1/4" thickness, Add the juice from the beets and jalapenos and a quart bottle of apple cider vinegar. All the heat will migrate to the beet slices. Add a can of beer on the side...Or 2. 4 days soak time and good to go! No heating necessary. Stack in alternative layers.

We always used distilled vinegar so the eggs didnt turn brown but cider vinegar tasted pretty much the same to me. The only spice we used once in a while was to stick a jalapeno in the jar.
I remember back home when every bar had a gallon jar of pickled eggs and one of pickled sausage right on the bar. My grandfather used to take me in and id sit on a stool eating pickled eggs while he had a beer.

jonp, That's where this recipe came from an old bartender in Ohio...LoL I did the same as you! I did have a swig of beer with the eggs!

Guy I worked with had a reputation for stink. No clue what he ate but he had GAS. We were prepping slot machines in a 2000 seat entertainment area at the casino that we used as a workshop when no shows were going on. Band that was playing the next day was setting up on stage 200 feet away. Greg drops one and we clear out, the guys 200 feet away were gagging... the entire area was toxic for an hour... he routinely cleared the shop. But his worst was when we were moving slot machines the elevator between floors, just as we get were leaving he left a surprise for the old people who got on after we got out. Doors close and you could hear them blaming each other for the vile stench that was hanging in the elevator car.. and it hung around for a half hour! We made Greg do all the moving for 45 minutes so he could suffer his own stench! Boss asked us why were quit moving machines. We told him to go ask Greg on the second floor. He came back down swearing at us because he got in the elevator then the doors closed and the stink hit him... it was a perfect setup!

No! You are a ruined youth ready to commit mass murder. Hahaha.
My grandfather was one of the founders of the VFW Post. Once we we were there throwing balls on the table because the posted rules said no one under 18 could use cues. He walked over, handed us cues and said no one told him how the rules worked. Nobody corrected him.
Him, Uncle Clet, Uncle Chee, Uncle Roland etc were hard men who did hard things and lived to tell the tale.
