This is a GREAT hot lunch or dinner on a cold winter day!
10 slices thick sliced bacon, cut into 1/4-inch slices
6 medium (3 cups) potatoes, peeled and cubed 1/2-inch (Unpeeled new red potatoes a plus here)
1 1/2 medium (2 cups) onions, sliced
1 cup sour cream
1 1/4 cups milk
1 (10 3/4-ounce) can condensed cream of chicken soup (Chicken broth a weak stand in).
1/4 teaspoon dried thyme leaves
1/4 teaspoon white pepper
Brown bacon in a dutch oven or 4-quart saucepan over medium heat, stirring occasionally.
Remove most of the bacon fat.
Add onions and cook covered and SLOWLY until they begin to carmelize.
When the onions are slightly carmelized, add the potatos and stir in well to coat with bacon, bacon dripings and onions.
Add all remaining ingredients and reduce heat.
Cover and continue cooking, stirring occasionally, until potatoes are tender, about half an hour or so, just make sure potatoes are done.
1 1/2 cup is a full serving with two rolls.
Serve with fresh bread or rolls hot from the oven
