Man I love o cook...love to eat also.

This recipe is for you guys that have a smoker This is a appetizer that i throw on the smoker with a brisket.
it only takes a couple of hours to be cooked and gives you something to munch on. or is t is FANTASTIC on a hot biscuit.

ingredients
2 pounds bulk sausage
2 pounds bacon LOL...YEAH BOY.....it is a pork fat thing!!!
gallon zip lock bag
filling
>>>>what ever you want,<<<<
I like pepperoni and pepper jack cheese

chill the sausage till almost froze...easier to work with
place sausage in the zip lock bag, lay bag on tin foil and press till the ausage is the same shape as the bag
a nice square
cut bag off ..dis guard,,it was just a form.
on one side of the sausage add your cheese and whatevers you like
roll the sausage in a roll, then wrap with bacon..it does not have to be a pretty lace secure bacon with toothpicks if needed

place this on your 225 degree smoker for 2 hours

this can be cooked in the oven, it will not have the smoked flavor
i have been told you can add liquid smoke to it if oven cooking
but i personally have not done that

Try making one with cooked lasagna pasta, ricotta and tomato sauce, sort of an inside-out lasagna.
I love fatties in almost all combinations.

I'd be checking that puppy all the time tearing chunks of cooked bacon off to eat.

Oh boy that looks good! I often add sausage meat to other meats and I like low heat slow cooked.

i do those on thanks giving morning. make breakfast ones with sausage, cooked eggs, hashbrowns, and peppers. your right. it is great on a biscuit! you can also make a great smoked burger using ground beef, fresh jalapenos and cheese. onece done just cut to your thickness and make a burger.

thank you, my cholesterol level was down a gallon!! I needed a refill. rely this looks like real eye candy, and even be fore i try it i know it will be fantastic.

I just got into smoking fatties last year. One recipe I found adds a step.
After you pull it off the smoker let it cool then wrap it in crescent roll dough and bake at about 350 until the dough is golden brown.
Quit smoking the other kind years ago.

I am pretty sure i went around the block more times than i should have. Luckily for me my health is bad so it now takes little effort for me to be good.;-)
