I have a Lyman universal heater plate
I just purchased a Saeco lube sizer and would like to know if I could drill and tap 2 new holes on the opposite side of the plate at the same place that the 2 holes are drilled for the saeco lube sizer
the plug wire is not on the correct side

I wouldn't, you don't know where the heating element is located or what size it is.
get a piece of ¼ aluminum plate about the same size of the heater plate, mount it to the heater then mount
the Saeco to it.

Spread some butter or crisco on the plate and plug it in, you will see real quick where the heating element is.

The heating element is straight in front of the cord and is about 1/2" wide. If you stay away from that area you should be ok. At least that is where it is on mine.

the only thing that can happen is I scrape the plate
but if I look at it I should be ok......

Another alternative is just make a new plate with a piece of sheet metal or aluminum big enough to set a clothes iron on. Works great turned down to the lowest setting. Even then I have to set it way back on the plate

The Lyman and midway heaters are just a cartridge heater in an aluminum plate. You can drill holes to fit your Saeco. I did. The cartridge element feeds straight in. You can pick up a scrap piece of aluminum and make one. 1/4” cartridge heaters can be had for $30
You can also put a clothes iron on an aluminum plate
