A good friend killed A BEAR here in Ky this past weekend, and since the wife and I were grinding up our two deer from ML season which was also open, he stopped by and offered me all the fat, if I would grind the shoulders up into sausage and package this for him, Deal done! I boned out the shoulders in about 15 minutes, applied a generous portion of Leggs#7 seasoning and ground the meat and seasoning into it in one time, and packaged it in poly bags as it came out the spout on the grinder, another 15 minutes of work. The wife fixed me a sausage burger for supper fried in bear grease, man was that good. We rendered the fat down yesterday, ended up with, 14 pints and a few half pints. Best stuff I have ever cooked with, white as snow when it cooled. It is also a great hand lotion for rough dry skin, is a great leather preservative for boots, waterproofs them to a degree, but extends the life of the boot, and wont rot the stitches. It is also a great shortening for baking, as it makes the baked goods puff up about twice as much as Crisco or veg shortening. This one was mud fat on acorns and corn, and was a young bear.
