the wife and I made some pickles and pickled onions today the should be ready in about 2 weeks fingers crossed,we also made some pickled sausage last week and they came out great,already need more lol

the pickles got put in pickling salt brine for 12 hours the washed and put in ice water for 3 hours,then packed in jars,then vinegar that was boiled with pickling seasoning was poured in and sealed

the onions were done in the same manner just in malt vinegar instead of white vineger

Pickled onion is popular here.
See it almost everywhere.
Onions don't like me, so I try to stay away from it.
We use a sweet onion called Maui Onion.
The weather has been "not to good" lately, so hard to find.
Sweet lower 48 onion is not as sweet.
Lots of people here make their own at home.
I've seen it with Opai (tiny dried shrimp), Ogo (sea weed), tomato, and other stuff mixed in it.
