A little nod to our Irish brethren on this St. Patrick’s Day.
Some "Dublin Coddle" in the cast iron dutch oven.
Highly recommend.
The only significant change I made, was that I used a "VooDoo Ranger" beer instead of the Guinness they suggest.

To me the stout sweetness is needed, that IPA bitterness wouldn't play well to me... As an IPA Voodoo Ranger is okay, not high on my list but I have had worse.

Mary, I had plans on making this again, only with slight adjustments. But after your words, I'm even more excited but now with Guinness, of course.
How interesting. Thank you for those words!

As far as the cast iron goes... haha... well, "yes", I can cook food and boolits in cast iron. ;)
(not in the same pot, just in case a noob is reading this)

I added half a cabbage to this recipe and put some hot dogs in it for the grandkids to eat. It was great.
