"COCONUT COOKIES”
˝ C. butter
2 c. white sugar
1˝ C. Crisco cream 5 min on high
1 TBSP vanilla
1/2 tsp salt___________________________________________
3/8 C egg whites (apr. 3 lg eggs) ______mix 3 min on med_____
5 ˝ C Coconut
4 C Pastry flour blend in

Use med ice-cream scoop then flatten lightly
Bake at 400° for 8-10 minutes (until very lite brown)

Makes 16 dozen. Best 24 – 48 hrs after baking

Your welcome, just beware. These are extremely addictive.

Watch them, very light golden brown and out they come-- don't over bake

Would not these more properly be called macaroons?

And for a historical reference one of the Queens of France (who herself was from Austria) brought her Italian pastry chef with her when she married the French king exposing the rest of the world to this particular cookie

When my wife makes macaroons , pretty sure it is just shredded coconut , sweetened condensed milk and some vanilla extract. They are very good.
