Here is another of my inventions. I had never had lentils in my life until I was a grown man. Now I really like them; but then again I like split pea soup also, which some people detest. It is a good, hearty soup for cold weather. I put the potato in to give it a little more body, but it is optional. You can also add your choice of meat if you like, but it is fine without it.

Lentil Soup

6 C Chicken broth
1 C Dry lentils
1 Small can tomato sauce
1 small potato peeled and diced
½ C onion, minced
2 Carrots, scraped and chopped
¼ C Bell pepper, diced
¼ C Celery, diced
1t Rosemary
1/2t Oregano
1T Basil
1/4t Garlic powder
1T Paprika
1T Dry parsley
Salt to taste

Place all ingredients in large sauce pan, bring to a boil, and simmer until lentils are tender (about an hour).

Rank me in with the split pea/lentil hate group LOL but it would work just as well with barley or wild rice!

I usually use vegetable broth and a smoked turkey wingette. This time of year, I make it almost weekly. Tom

I cheat. I mix a can of lentil soup with a can of tomato basil and add a chopped up polski kiebaska.

Wifey made the soup, for yesterday's dinner. Turned out very well. I copied and e-mailed her the recipe. What peaked my interest was the diced carrots and potatoes. Growing up, my mother's lentil soup had those two ingredients. We lost her recipe, when she passed.
