Where have I been? Oh my dear Lord that's good.

I'm still picking at my pork butt left overs from the fourth and decided to try these. It works!


I took a fist full of pork with a lot of burnt ends not yet shredded, splashed some mohito over it and heated it up. Deep fried soft corn tortillas just a few seconds each side. Add pork, red onion, diced tomato, a slice of avocado, squished a lime wedge over it, a splash of Chipotle cholula, a small dollop of sour cream.


I was gonna eat three.


I ate five.

Great use for all leftover smoked meat, try it with smoked chicken!

I'd like that! I love gyros.

Mary. I'm a failure smoking chicken. I get rubber chicken and no crisp. I buy it out though.

mmm, I have a neighbor who owns a food truck "Taqueria Del Buen Pastor" and does the best street tacos. Their Mariated Pork is the best, they put a small amount of pineapple with the seasonings in the pork mix.

I start at 225 for 15-20 minutes to get some good smoke on chicken then boost to 375 to crisp the skin. That is for leg quarters. I take them to 180 internal to get them tender, 165 is fine for breast meat but dark takes higher temps for tender. You can also toss them on the grill to crisp the skin right before serving. Good time to add sauce too.

Thanks Mary.

My smoked chicken I made in a drum smoker. It is normally set to run at 225 but I'd need a screwdriver to Open the air. I got a new offset Oklahoma Joe smoker that has a lot more controls. I will revisit the chicken!

If you're serious about a seriously good authentic taco....this is worth the read. I did it.....with very few minor mods. No bacon....and just used a boston butt. It takes a couple-three days to come together....but oh my.

Used some leftover pulled pork, a little taco seasoning, flour tortillas, scallion from the garden, some romaine form the garden, green olives, salsa, sour cream and made burritos! Quick, very tasty!

Where can I find your neighbor's truck in Glencoe? I go through Glencoe fairly often but I'd drive the 65 miles to try those tacos!!

These tacos are small, but each one is wrapped with two (palm of hand sized) corn tortillas and enough meat-n-stuff to fill both.
So, I always grab them with just the one tortilla and as I eat it, about half the meat-n-stuff falls out and into the second tortilla on the plate...BOOM, 3 tacos are now 6 tacos

A taco truck in Glencoe of all places. Those tacos have insired me, tomorow for dinner is chorizo tacos.

Now I need an excuse to go to the Twin Cities so I can stop in Glencoe for lunch... it is my usual pit stop for a bathroom and stretch break being about half way...
