Not particularly caring for chicken breasts and dreading dry chicken breast, this was my fix for lunch.

Marinated the breast chunks in lime juice, chile powder, some Italian dressing.
Got some tomato chunks ready. Pre-cooked some pasta shells about 3/4's done and doctored them up with olive oil and Italian herbs.
Used flour and cajun spices and browned the chickie chunks.

Loaded in the shells and tomato.

Added some water and a chicken bullion cube.
Simmered until the shells were done.
The meat wasn't dry or cottony and the better 2/3's and her little sister both liked it.
Yay!

Can't see attached photos. Sounds great though! My answer to dry chicken breast is boneless thighs. So much more moist and flavorful however prepared.
