View Full Version : Tex-Mex Enchilada Casserole

Enchilada casserole is pretty standard fare to cook at home here . It's dang good ! IT's simple and fairly quick to make for the large amount you come out with . Another great Tex-Mex innovation ! Here's what you need ;

2 - 21/2 cups of shredded cheddar (I prefer medium)
11/2 large jalapeno ...chopped
1 19oz can of Wolf chili no beans ( or another brand)
1 10oz can of Rotel Tomatoes (! prefer the ..Fire Roasted)
1 Large onion , chopped
1 16 oz pack of corn tortillas

Chop the peppers , onion , grate the cheese .
Mix the chili and Rotel well in a bowl to make the 'Enchilada Sauce'

I'm using a 12''x10'' foil pan , coat the bottom of the pan with sauce .

Start layering in the corn tortillas .

cover with sauce and add peppers , onions , cheese

Keep layering till you have enough sauce for the top layer . The top layer gets only tortillas with sauce on top ;

Cover with foil , preheat oven to 400 Degrees , put in oven . Leave at 400 for 20 min . Then turn oven down to 330 for an hour and 20 min.

LOL , Mines in the oven now ! be back to wrap it up .

Take it out of the oven and garnish top with cheese ;

Put it back in the oven for 3-4 min to melt the cheese and take it out and enjoy !.

Looks delicious! It looks easy to change to suit tastes as well (like adding cooked ground beef).

Ground beef works well . And your right ...you can add black olives , beans , corn .... . This is the simple version , tweak it like you want ! lol , lot of folks are not going to want jalapenos .

Casino served a version of this in the employee cafeteria with ground beef, black olives, lots of onion.

I bought all the stuff to make it last night.

What is the reason for the two different oven temps?

Start out at higher heat just to reduce cooking time ...thats all . It will do fine at a lower heat but add more cooking time .

As to the onions, I'm with Joostain Wilson, who once said, "Ya' jes' cain cook widout dem onyo!" I think he had something there! And I think they're good for your blood pressure or something, but if they were poison, I think I and a lot more would try to see just how much we could eat without getting badly sick!

If I am out of onions I have a fallback, Penzy's onion powder is really good stuff. I now buy from their family members who didn't manage to irritate every conservative on the planet. Same quality https://www.thespicehouse.com/ I buy onion and garlic powder by the pound to mix my own seasoning blends or as an onion sub when I am out(like right now, forgot to get some today at the store). And in some things where onion pieces are objectionable like cream soups.
