Grabbed a can outa the pantry tonight and fried it up crisp with some onion powder, garlic powder, pepper, salt, and butter.
Scrambled a couple of eggs in with it.

One of my favorite meals.

Anyone have a recipe for some "from scratch"?

I prefer to make my own hash.

Cook in oil, maybe 1/4 cup
5 medium potatoes diced
1 good sized onion diced
parsley to taste
salt and pepper to taste

when this is cooked


add a can of corned beef
cook until blended well

cornbread to go with it

1 cup yellow meal
3/4 cup flour
1/8 cup sugar, can omit
mix with fork

milk enough to make a thick batter
mix

1/8 cup melted bacon grease, added last, stirred well

pour into a cast iron skillet greased with bacon grease

back on 425 until edges a crispy and top is golden brown

Thats the way we do it. Mom taught me, she is from the georgia mountains.

I take what ever corned beef is left from having a slab for dinner and mix it in equal portions with what ever potatoes and vegs are left over in zip lock bags and freeze them. Then when I want corned beef hash for bfast, I put a bag in the reefer to defrost overnight and the next morning break it up and fry it up with onions red and green peppers and drop some poached or fryer eggs over it.

When I say a slab of corned,beef, I am talking about a 4-5 lb of corned beef you cook in a crock pot for 8 hrs on low and it is fork tender when done. Hard to cut slices as it is so tender it falls apart. I like it from the can too, but being the only one in the house who grew up on New England boiled corned beef and cabbage and like it, I have a lot of frozen leftovers in the freezer.

I run leftover corned beef through a coarse grinder plate then freeze that is serving size portions. If I have a leftover baked/roasted/boiled I cube it small dice(1/4 inch) along with grated onion and fry in bacon fat until it starts to crisp then ad the already cooked meat and left it fry more until nice and crispy. I season the potatoes with a shake of my house seasoning(salt/onion powder/garlic powder in equal amounts, black pepper to taste, half sharp paprika to taste). Serve with 2 eggs over easy on top so the yolk can run down through the hash. Biscuits on the side with lots of butter.

Love the stuff, by itself or with over medium eggs and sourdough toast slathered with butter. Haven't tried making any from scratch yet but Bazoo's recipe looks dang good.

Oops, just saw MaryB recipe, that sounds awesome too.

Pan fried in bacon grease, eggs, and old bay. Topped off with a little hot sauce. The kids and grandkids destroy it in no time.

I've got one of the newfangled electric pressure cookers, and when available I'll buy several corned beefs at Costco. I'll cook up one in the pressure cooker at 15.0 psi for 65 min. and make corned beef and cabbage. Then the meat that's left over goes into the fridge for a couple of days, then gets chopped into cubes and browned in vegetable oil with cubed potatoes and onions. Fried altogether at the same time. Salt and pepper as needed. When the potatoes are done, everything is done. The two over easy fried eggs on top are a must, as is a splop of La Victoria Salsa Brava or Hot Pace Picante. I'll second the fresh biscuits and butter, but hot corn tortillas or fresh French bread and butter works well. :D

Had to post this mornings breakfast . When we are camping, I just scramble the eggs right in. My boys call it dog yack breakfast. We, the males love it. I love it, but the canned stuff is a bit pricey now a days for me. I prefer the real thing cooked at home( I use pressure cooker most of the time) anyway, but when I get a hankering for it, I will take the canned vs. none at all.

Man it's been ages since I've had CBH.... First had it as a kiddo at a local dinner/popular breakfast spot. I remember asking dad what it was and ordering a small side of it with my biscuits & gravy. Delicious! Savory, salty, crispy goodness! Needless to say, I pawned off most of my biscuits to dad and he let me order a plate of CBH!

Its been way too long since I've had some since its not to common on menu's anymore. I snagged a can of Mary Kitchen brand yesterday along with sausages, eggs, Texas toast, pancake mix and some OJ! Sounds like a dinner plan to me! I LOVE breakfast food and can't wait to taste the corned beef hash!

I'm putting together a traveling kitchen for the Jeep. Not a prepper thing, more of a nice thing to have on hand if a scenic spot is encountered around meal time. An easier one-pot meal consists of spiced up Ramen Roast Chicken noodles, with Sweet Sue chicken breast, which comes in 3 ounce and 7 ounce packets. No cooling required, only water and spices to add. To the spice packet that comes with the Ramen, I add salt, pepper, Lawry's seasoned salt, celery salt, minced onion and a squirt of YellowBird habanero sauce. A handful of chopped veggies would add some class.

Mary's kitchen is where I eat every night .
I don't care for the Hormel canned corn beef but the Argentine stuff is pretty good .
I can't say about the canned hash either I think we only 1-2 brands out here and none locally .

We tear up the corned beef and cabbage , new potatoes and carrots for St Paddi's , I did 15# of meat . We had dinner 2x , 5 sandwiches and the corned beef and potatoes for breakfast with eggs 1 morning . I will say that rogue carrot was different with eggs .

That sounds marvelous! I may try your mom's recipe, it sounds good! I find my tastes have changed somewhat since I left home...My mom tried, but was never much of a cook, and I was surprised how much better everything tasted when I entered the military. :o

One night, while out to dinner, they featured Corned Beef on the menu. I ordered some, because it was like 50 years since I had any. It didn't taste as good as I remembered...but, it was the same with SPAM, and I was raised on the stuff.

Heck... Im thinking bout trying another batch of hash myself. Might add some green peppers and see how that is. I aint ever added egg.

Sometimes we do the same thing as hash, but use ground sausage instead. Ats pretty good too.

Want a breakfast to kill your arteries...

Chill the can of corned beef, cut it open and extract it as a log(slide a knife around the sides to break it loose). Cut slices, fry until crisp on both sides and hot in the center. Then pile it on a toasted and buttered english muffin with a fried egg, 2 slices of bacon, and a slab of good cheddar.

Have not yet made my own hash, but have been thinking on it.
One of my family's favorite breakfasts. Two cans of hash fried to slightly crispy and fried eggs on top.

I love it. The trouble is I also like reheating the boilded dinner and I like
Reuben's. So it's a tough call to make. All roast meats make good hash. Home made is better than canned but canned works.

I Actually like the AldI's canned. A little less salty and a touch more taters than the Mary kitchen/hormel.


I fry it crisp and eat with fried or poached eggs. Or even eggs cracked right on top
and cooked on the hash. Must have toast and coffee with it.

I have found that the canned hash is salty, and lacks taters as well. Been times we just cooked some taters with onions and added the canned hash to it, but it aint as good as homemade.

When you all said canned corned beef, I though you were talking,about just the corned beef in a xan. No potatoes. The navy base here in San dog sells it by the case. I gave not convinced my wife yet thay a car is good to have, just in case. Not that she would eat or cook it. I liked the info about chilling the c an of hash and pulling it out like a log and than slicing it. I will look at Marys. I have to watch the canned stuff as I have celiacs and can not eat anythig with wheat. Means I gave to make my own gravy and sos. Not bad but means I can not eat out for bfast and get that.

Armour is a common brand round these parts. Its salty.. but not bad. If you make some taters to add to it, it evens out the saltiness decent.

That's the way (never tried with cheese though) I liked it. Used to stop in Mancelona on Sunday morning, Aveyry's all you can eat buffet. Home made C, B & H, smothered in sausage gravy with extra sausage patties alongside a pile of scrambled eggs & rye toast. Been a long time!

:D Hi MaryB.A little trick for getting stuff out of cans,such as cranberry sauce and canned meats like hash.Remove the lid.Then poke a hole in the bottom with whatever is handy.Then blow.The contents will slip right out.Oh yeah.The only thing better than CBH,is MORE.

Dad was an old marine, and he always thought corned beef hash with fried eggs was a delicacy! Us country boys have simple tastes, oftentimes, and mainly are just concerned that there's plenty of whatever's being served. He taught me to love corned beef hash, and Mom always used the canned stuff. She never make homemade, though I'm sure she could have had she been motivated. Dad always asked for the canned stuff, so I guess that's why I'm really not familiar with the homemade stuff, but the recipes here sure make me want to try some! Thanks! I can't have potatoes, though, so I may have to work around that somehow. Probably won't be as good (I used to LOVE potatoes!) but I'm getting used to that. I'm having to learn to get inventive with my cooking. Sure is interesting, and most of it tends to come out pretty darn good, if I do say so myself. You guys here really inspire me, and give me lots of ideas to work from, even when some of the ingredients are verbotten for me these days. A man who helps feed you well will ALWAYS be a friend!

hash is made from left overs. In theory there is no wrong way to make it.

It it must have meat and potatoes but maybe sweet potatoes are ok for you? Cauliflower might be a substitute or turnips. After that it's what you got.
Carrots. Onion, cabbage, garlic, it's all good. Just add black pepper.

Hash can be made with meat and leftover veg from the roast. I often make it with the roasted carrots when I make a chuck roast, add a little corn or other starchy veg(if not diabetic) otherwise stick to whatever leftover veg you have that tastes good with meat!

The wife got Libby's brand, "a product of Uruguay," and gee golly wow was it salty! I ate it anyway, but won't eat the other can. It was good, but just too salty, and I'm not supposed to have any more than the barest minimum of salt these days. Next time, I'll go pick it myself! And I have to admit, other than being salty, it sure was good!

LOL , when I was rough necking on drilling rigs many times we had to double over or stay up to 2 days to run the long string of casing . I always carried some Wolf brand chili , corned beef and yep corned beef hash . Heat in up on the exhaust manifold on a Waukesha LOR of screamin twin bank Jimmy .

kind of comical. I was talking to dad yesterday and this made me think about when we were kids. We had corned beef hash quite often and all 6 of us kids like it. Funny you said that. I can't open a can of it without thinking of my dad. He's the one that got me hooked on it. Not sure if my brother likes the stuff or not. I'm gonna have to text him and ask.

I was at the Dollar store last week, I bought a few can's of Southgate corned beef hash. I do like the normal canned corn beef hash, but this $1 per can Southgate stuff was awful. It was runny, almost like soup, and mostly potato, very little meat. I tried to make my usual fried corn beef hash, form a donut shape, crack egg into hole and fry some more ...I ended up with potato/egg soup:sad:

Range report here.
Wally world had their great value brand of hash on sale over the weekend. $1.62 a can. Well wasn't impressed. Definitely a grade lower than others I've tried. Taste was ok but just not Mary's quality.

I prefer to make my own hash.

Cook in oil, maybe 1/4 cup
5 medium potatoes diced
1 good sized onion diced
parsley to taste
salt and pepper to taste

when this is cooked


add a can of corned beef
cook until blended well

cornbread to go with it

1 cup yellow meal
3/4 cup flour
1/8 cup sugar, can omit
mix with fork

milk enough to make a thick batter
mix

1/8 cup melted bacon grease, added last, stirred well

pour into a cast iron skillet greased with bacon grease

back on 425 until edges a crispy and top is golden brown

Thats the way we do it. Mom taught me, she is from the georgia mountains.

The only canned goods that give me concern are your high acid foods like tomato products and pineapples. I've had cans in date eat through both. Never saw that as a kid but I seem to have a can let go every couple years. What a mess too.

Wally Mart Great Value is $1.98 for the 15 ounce can and the reviews were pretty good. I'm going to give it a try.
I have found I actually prefer some of the Great Value products to the name brands.
I have been a Spam lover my whole life and tend to be brand loyal but tried the Great Value canned Luncheon Meat ( after a hurricane supply run cleaned the shelves of spam) and I hate to say it but it was good and I liked it.

One of my favorite meals. Anyone have a recipe for some "from scratch"?


From scratch, ehmmm. Do you all know what the corn beef is made with? lips and *******. I guess briskets could come close to "from scratch". Basically corning meat just about destroys, covers, or eliminates any basic structure of the initial meat started with. It is basically just curing meat with salt. Sometimes fats are left on like the briskets that might add to the flavor of a dish like a corned beef dinner. But, a corned beef dinner taste nothing like beef.

So, you could take any meat source and corn it with salt. I take all my deer shank meat and other similar scraps when butchering deer and cut it up into small pieces. Get a five gallon bucket, fill it 2/3 with water, add enough Tender Quick to almost float an egg, add a generous Tbs or more of pickling spice (if that may float your boat), stir, then add meat. When the meat starts to sink or mid depth take it out. Rinse if you want. Really the salt solution or its intensity, the length of time on the soak, and the choice of the rinse is where salt becomes to the palate, too salty or not salty enough. Experimentation is needed at this process to you own palate. Something like cooking up a silver stream for the gun you just bought in the spring and needing to figure a load for the fall deer season. You can play with other spices as well. Can in 1/2 pints or pints depending on your possible corned meat consumption.

Finely dice enough taters for the pan you would be using, pour a little oil in, chop up an onion, and add a meaty portion of your corned product and cook with cover slowly just about when the taters are done then turn up the heat and crisp the hash. When you do the process to your liken it can get pretty tasty with "Ah , I ate to much and can't breathe after breakfast" tendencies.

The canned corned meat can also make decent sandwiches. Along with a variety of tablefare uses. Like maybe when the cheese and crackers come out with the salamis, pepperoni, braunschweiger, and the cold dark beer for supper.

Diver ducks, Mergansers, coots, bad tasting wild hogs or their leg parts, porcupine, possum, whatever meat that is really not palatable tablefare is a candidate for this process. Or, if it is too sinewy for the grinder, corn it.

As j was reading your post I was thinking to my self he must be from the south and low and behold from my neck of the woods but I'm from Ashland, my corn bread recipe is

1C cornmeal
1C self rising flour
1/2 C sugar
1C milk
1 egg
put about 2 table spoons of Crisco in your CAST IRON skillet (about a 8")pre heat oven ton350 an d get your skillet nice and hot pour in your mix (you want it to start cooking on the edges when you pour it in) bake until done around 35-40 min. And you will have the best cornbread ever and by the way I'm 31 and
I prefer to make my own hash.

And she fried up the hash she made. Almost better that way than as a roast .

A can of the Hormel Hash, a small can of mushrooms, a small can of green chiles, 10 large eggs or more,size of hash can and frying pan determine egg count, a hanfdful of grated chess, a couple spoons of dark chile, a couple spoons of paprika, other spices you like, cook and stir until all the liquid disappears, might last a day or two. Take the leftover, put it in a soft tortilla, cover with green chili and cheese for a few more meals.

Ok, I did it finally and it didn't turn out too bad for as ugly as it looked.
I'm not in the know for homemade biscuits or gravy so a packet of McCormick's country gravy mix worked in it's place, a can of Armour corned beef hash and a couple of Mary B's buttermilk biscuits. I just heated the hash in a sauce pan and made the gravy while the biscuits were in the oven. When it was all done I just poured the hash in the gravy, mixed it up and poured over the biscuits.
Like I said it didn't look real appetizing but it was pretty tasty with a dash of pepper. Maybe next time I will fry the hash until crispy then put in the gravy.

Looks ok to me. Next time, try frying it up crispy, make the gravy and biscuits, then put a good portion of hash on your plate, top with one or more over easy (or sunny side up), put biscuits beside the hash, gravy on the biscuits. Break the yolks and let it flow down into the hash. Dig in. Yum-Yum.

So I've been making CBH the same way for 30+ years. Dump the can into a skillet, sprinkle some black pepper, onion powder, and garlic powder on it and fry 'til crispy. Not bad. As much fat as there already is in the can, it never occurred to me to add MORE fat until about a couple of weeks ago. That's when I put some butter in the skillet and then fried it. Talk about a transformation from delicious to bliss!

I'd been doing it wrong all this time and never even knew it!

I sometimes if ambitious enough add bacon to it too. I make my sausage gravy in big batches and allways have glad containers of it in the freezer. Its good on fried potatoes or chicken fried steak or about anything.

The Mary Kitchen from Hormel is the benchmark, Libby's Corned beef hash should be avoided due to it's higher water content.


I like mine pan fried in it's own fat but when it is just about done (I like some bits to be crispy) I make divots in the hash with the backside of a soup ladle and into those depressions I add a single pat of butter and one jumbo egg and put the lid on the pan (preheated on a pot of boiling water) and turn off the Heat and allow the residual heat from the hash cook the eggs.

The only seasoning I'll add to the eggs is a shake of Morton's "Nature seasoning"...

This is a recipe for making corn beef from scratch that comes from a New Mexico Boys Ranch cook book written by my wife Martha with help from others.

CORNED BEEF
10 LBS Brisket or beef 1 c up brown sugar 1 cup smoked salt
4 cloves garlic chopped 1 tsp paprika ˝ tsp ground mustard
˝ tsp saltpeter ˝ cup water 1 medium onion diced
2 bay leaves ˝ cup Apple cider vinegar
1 large carrot sliced 1 Tbl salt
Debone the meat and remove surplus fat.
Wash the meat well, dry with a cloth and place in a stone crock jar with brown
sugar smoked salt, garlic , paprika, ground mustard and salt peter dissolved in ˝ cup of water. Cover the jar with a plate weighted down on top of the cloth..
Let stand 12 hours and then add enough cold water to cover the beef.
Leave the jar in a cool place for 10 days. Then take the beef from the brine.
But, do not wash it. Place the beef in a kettle with onion, bay leaves, vinegar,
carrots, brown sugar and salt.
Cover with cold water and boil until tender. Let the beef cool in the liquid.
This meat is delicious almost any way you want to use it.

Sometimes we do the same thing as hash, but use ground sausage instead. Ats pretty good too.

Hormel's "Mary Kitchen " brand offers hash in three varieties and my local Walmart carries all three types
Corned Beef, Roast Beef and Sausage(Which I've never tried)

To be honest, The Sausage hash gave me an idea, to make my own.
starting with a 1lb roll of fresh sausage and two medium Onions and a bag of Ore-Ida
Frozen precut potatoes from the freezer section.
Break up the sausage and cook until it is almost done then add the onions
when the onions turn clear add the frozen potatoes.

Serve with fried eggs cooked in the left-over sausage grease. and coffee (If You don't drink coffee can you be trusted?)

Armour is a common brand round these parts. Its salty.. but not bad. If you make some taters to add to it, it evens out the saltiness decent.

A good way to get potatoes diced correctly for adding to it, is Ore-Ida brand frozen precut Potatoes O'Brian sold at most stores and all Walmarts

I've found that if you spend enough time outdoors at sub-freezing temps that you will do strange things like eat the disc of congealed fat found at one end of a can of chili and discard the rest, or eat a stick of butter like a popsicle. (perhaps sugaring it)

and a can of evaporated milk, I added additional onions and minced garlic on my own.

My father is the one that makes the biscuits and he NEEDs Numbers and I tell him 2% milk and biscut mix to consistency,
SCREW the numbers, and he goes off on a rant about language and I suggest putting the bowl on his head and going to dig worms somewhere far away.

It is too simple a task for him to deny the need to screw it up with overthinking it.

I had never tried corn beef hash before, and not because I'm under 30 :) Living in the Philly suburbs our goto breakfast meat was always bacon, scrapple & Taylors pork roll. After reading this thread, I asked the wife to put some Mary's Kitchen on the grocery list. Tried it this morning for the 1st time and have to say...it was really really good :) Just fried it up in a pan with a couple eggs over easy on top & buttered toast. I think next time I'm going to try it with some Texas Pete hot sauce...just because everything tastes better with Texas Pete on it. :bigsmyl2:

I use a griddle to fry it on, spread it out in a thin layer to cook off the water and crisp it faster. More crispy goodness that way too! And yes, start with a little bacon fat! The onion/garlic are optional if you are in a hurry.

I had never tried corn beef hash before, and not because I'm under 30 :) Living in the Philly suburbs our goto breakfast meat was always bacon, scrapple & Taylors pork roll. After reading this thread, I asked the wife to put some Mary's Kitchen on the grocery list. Tried it this morning for the 1st time and have to say...it was really really good :) Just fried it up in a pan with a couple eggs over easy on top & buttered toast. I think next time I'm going to try it with some Texas Pete hot sauce...just because everything tastes better with Texas Pete on it. :bigsmyl2:

I start it off with melted butter or bacon grease, and chopped dried onion with minced garlic. Add the CBH and sprinkle with Lawry's Seasoned Salt. It takes a while to cook out the water in the taters and get some crispness in the beef, all the while making the cook shack smell really good.

Since reading this thread and trying Mary's Kitchen back in January, I've had it no less then twice week ever since. I'm the only one in the house that eats it, so I usually have half a can with 3 eggs on top on back to back days. I've had cravings for it and used it as a late night snack on occasion. :bigsmyl2:

Can't get enough of it...why did it take me 47 years to discover this stuff?

I took the plunge and made some this weekend after always hearing my dad and grandpa talk about it...it was like the biscuits and gravy epiffany all over again...why did I wait so long? I found a recipe and so I canned 14 pints of it saturday night. I took the scraps that didn't fit in the canner and threw them in the instant pot and then Sunday morning fried everything up it was supposed to be a double batch... just made for a really good sized breakfast. I think I'll find out how the canned stuff turned out this weekend!

Anyone have a recipe for some "from scratch"?

This isn't as hard as it looks. It is, hands down, the best corned venison (or beef) recipe I've ever had. If you try it, please tell me if you liked it!

Corned Venison (Beef) Hash with Poached Eggs
Ingredients Hash:
1 cup diced boiled red-skinned potatoes
1 cup colcannon (mashed potatoes with steamed cabbage onion and bacon)
2 cups diced cooked corned venison (corned beef is ok too)
1/4 cup corned venison cooking liquid or chicken broth
1/2 medium yellow onion - grated
1/2 clove garlic, mashed
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon whole-grain mustard
1/4 teaspoon dried thyme
Pinch nutmeg
Freshly ground black pepper
1/4 cup plus 1 tablespoon unsalted butter
4 cups cold water
1/2 cup distilled white vinegar
1/2 teaspoon kosher salt


Directions
In a large bowl, mash 1 cup of the potatoes with a fork. Add the remaining potatoes, corned venison (beef), cooking liquid, onion, garlic, mustard, parsley, thyme, and nutmeg. Season generously with pepper and mix well. Store in the refrigerator overnight or at least 3 hours.

Preheat a large well-seasoned cast-iron skillet over medium-high heat. Add 1/4 cup of the butter and heat. When the foaming subsides, add the hash mixture and cook, stirring, for 30 seconds. Using a spatula, press the mixture down into a cake the size of the skillet. Cook, shaking the skillet occasionally, until the hash begins to brown, about 4 minutes. Reduce the heat to medium and continue cooking, shaking the skillet to loosen the hash occasionally, until the underside is browned and crusty, about 6 minutes more. To flip the hash, set a plate the size of the skillet on top of the pan. Invert the pan so the hash falls on to the plate as an intact cake. Invert the hash onto another plate, cooked-side up. Return the skillet to the medium-high heat; add the remaining 1 tablespoon butter. When the foaming subsides, slide the hash into the skillet cooked-side up. Cook, shaking the skillet occasionally, for 3 minutes. Reduce the heat to medium and cook, shaking the skillet occasionally, until the underside is browned and crispy, about 5 minutes more.

Poached Eggs:
Set up for poaching the eggs: Combine the water, vinegar, and salt in a large skillet and bring to a gentle simmer.

While the corned beef hash is cooking, crack an egg into a cup and carefully slide it into the hot poaching liquid. Quickly repeat with all the eggs. Poach the eggs, turning them occasionally with a spoon, until the whites are firm, or to the desired degree of doneness, about 3 to 5 minutes. Using a slotted spoon, remove the eggs and transfer to a kitchen towel. Lightly dab the eggs with the towel to remove any excess water. Divide the hash among plates and top with the poached eggs.
Serve immediately.

This popped up again, so I'll throw in me $.02 again.

I come from a Family of German Jew's mixed with Irish & Scots. So I grew up on REAL HOMEMADE CORNED BEEF. It was a monthly staple, Corned Beef with potatoes & carrots. Then CB sammiches w/Mustard for lunch the next day. Then Hash & eggs on Sat morn.
We had a jar of mayo in the back of the fridge, reserved for egg and/or chicken salad sammiches. And of course Turkey sammiches at Thanksgiving.

My Dad always brought cans of MARY KITCHEN CORNED BEEF HASH on fishing,hunting,shooting trips.
The REAL STUFF fried with poached eggs on top at home. The canned M K in a skillet with 4-6eggs mixed in at camp. Quicky breakfast and go. Still tasted great.
60yrs later I still make the canned stuff the same way.

Pickleing our own CORNED BEEF died with my Grandmother's. But I still make my own CB HASH from leftovers whenever it boil up a prepackaged CB from the supermarket.

Never had any but the canned stuff. Dad used to fry patties of it and some fried eggs. It was good, bit a little harsh on the back of my throat. I always took some when I went on an overnight fishing trip....it seems my buddy and I always ate better down by the lake.....

Ate at a place in Northern Wisconsin, Woodruff, at a place called Tulas. Probably the best CB hash I have had. They used hashbrowns, cooked a bit crisp, with onions too. The CB they used was excellent.

In my experience, 'coons will eat most anything, including a pair of my old combat boots. - Essentially everything was consumed except the soles.

Coons are SMART & will do things that are sometimes amusing & sometimes aggravating. = When I was the Camp Director at an AR Boy Scout camp in 1969, I cooked a Dutch oven full of blackberry cobbler, set it aside to cool & when I returned several hours later, coons had removed the lid & helped themselves to all of my cobbler.
(Given the several different sized paw-prints near the Dutch oven, quite a few coons had enjoyed the cobbler.)

So from reading this thread, I was compelled to toss a can of Libby's in the freezer while I cooked some grits and let it chill enough to push it out of the can and slice it into 1" thick slices using the can as a guide, then brown it hard and crispy both sides on a cast iron griddle, oh yeah. That's what CBH is supposed to taste like!

Wifey uses can, fried crispy with onions and potatoes from home. Topped with 2 over easy eggs and Tabasco chipotle or Habanero sauce. Slightly burnt sourdough on side , with my butter mix of butter, EVOO, & Ex. Virgin Coconut oil, with a dash of ink Himalean Salt. Almost as good as SOS or biscuits and gravy!

I have a can of MK, Libbys, Armour, Hartford House (never heard of them before) and Great Value (Wal-Mart store brand). Will be as subjective as possible and will fix them the exact same way (broken up and fried with over easy eggs on top, with sourdough toast or english muffins).

I like these types of tests and can usually pass them easily (no pun intended - really) :p

I make them for company(makes to many for just myself)They don't need a lot of smoke so I cover with foil to finish at which point they can come into the house and the oven if you need smoker space for something else.

OK, got done with my unscientific taste testing.

MK, to my unsophisticated palate, the Mary Kitchen was the best, nice sized pieces of corned beef and potatoes, not greasy, fried up easily with a nice crust.

Libbys, Was greasy, but the can I had wasn't too bad. Good taste, fried up nice with a good crust.

Armour, Was a bit disappointed, corned beef and potatoes were cut very small, didn't fry up good, kind of mushy, just an ok taste, needed more seasoning.

Hartford House (never heard of them before), cut almost like it was run through a food processor, to get it not to stick to the pan you had to fry it medium heat and not touch it until it wanted to release on it's own. If you went with a high heat, it would stick and burn and if you tried to turn it it was like mush. That said, Once I got it done it didn't taste bad, just was mushy.

Great Value (Wal-Mart store brand), surprised me, meat and potatoes were nice sized, not greasy, fried up nice and crisp pretty easily, good flavor but could have used a bit more seasoning.

Overall, I liked Mary Kitchen the best. They also make a very good sausage hash, really good taste and if you wanted to put it in a cream gravy, it would be very good over biscuits. Libbys wasn't bad but a bit too much grease. Great Value was the surprise to me, what I had was pretty good other than the lack of seasoning.

Best was my own homemade because I can control the size of the meat and potatoes (and the type of potatoes used - Yukon Gold are good in hash).

I will probably keep some MK (both kinds) in the pantry but wouldn't hesitate to get the Great Value if needed.

There you go, my taste test. Here it comes: Your tastes may be different than mine so "caveat emptor"

All Kroger/Ralphs carry MK C/B hash, at least in the southwest. So does TARGET & WALGREENS. And it's a lot cheaper then Ralph's.
And if you buy it at WALGREENS, there is no chance of getting those gross brussel sprout thingy's in your basket.

OK little bit of a twist on CBH. Sunday I fixed a nice pot roast for dinner. It had potatoes onions carrots garlic and a beef roast. So Monday night I had left overs and finished up the beef .but had several carrots onions potatoes. So I've always liked when I was a kid mom made the same roasts but always made extra everything ( beef roasts used to be cheap as we all remember? ) she would b use the hand meat grinder to make a hash out of the left overs. so I decided to experiment. So I diced up the left over veggies and some of the juice and added the roast beef hash to it. Fried it till it started to get crispy. It's not like mom's but by golly it was very tasty!
Just another recipe for someone. Beats the hell out of McDonald's lol229667229668

I bought a small slab of bologna at the store, diced it up, diced up some potatoes and tossed some seasonings in and fried it up. Had it with some pork&beans and garlic bread and sweet tea. The kids (then age 12 and 14) would not even try it. Mom did just to please me but she said it didn't really please her palate (she did not like it either). I loved it.

Hash is the dry version of whatchagot soup. I love a good hash from the remnants of Sunday’s roast of pork, beef or venison. Whatever left over vegetables there are too, add more potatoes if needed, works with left over mashed taters too. Always add have onion in it!

I made some CORNED BEEF Hash today.
Mainly because the Corned Beef I made yesterday for Dinner turned out strange. It crumbled when I tried to slice it from the fridge this morning.

I've never overcooked one in 40+ years. Never had this happen.
So the Wife said make Yourself Hash. She will eat a CORNED BEEF Sammich, Hot or Cold.

But GOD forbid she should eat any kind of CB Hash.

So I made some. It's been YEARS since I made any because My Wife never leaves leftovers.

I don't know what I did wrong. 2 Big potatoes, a quarter onion, chopped small, 3 big garlic cloves, minced, generous salt and pepper.

Fried veggies crispish in Bacon Fat and tossed in CB. Cooked medium for 20 minutes.

Tried a 3/4 cup, a bit dry & bland. Just then My Wife came home. 1430hrs, Why aren't you taking a nap, you know you have to nap between 14-1500hrs. I'll put this away after it cools, go to sleep. So off I go as ordered.

After dinner, as we put things away and clean up. I looked for the CB in the fridge. Couldn't find it, asked ?

Oh, It's in the orange top container. THAT'S ALL OF IT!!!

Jeez, there wasn't enough to fill a can of Mary Kitchen CB. 2 big potatoes, a 1/2 cup of onions and a pound of Corned Beef. All I get is 2 cups of HASH ????

What the heck happened? Did It cook down THAT much.

Or.......... Did My WIFE secretly eat some ? ? ?

Growing up, my mom would mix a little ketchup and a hint of mustard in it. Cover a piece of bread with it and top it with a slice of cheese. Put it in the oven and bake it until toasty. I loved those sandwiches.

I created a new dish Sunday. I love Brussels sprouts. Normally I fix them with bacon or ham or smoked sausage. Onions garlic. Fried till good and brown around the edges. Well Sunday I decided to use CBH as my meat. turned out very well!

IF you like Brussels sprouts here is one for you to try.

You start with two 1lb bags of the "Baby Brussels sprouts" and a package of Wright's Bacon (I used to get these at WalMart, but the last couple of times I've looked they no longer have them(?)
ends use as much of the bacon ends and pieces to line the bottom and sides of a
covered casserole dish then add the sprouts with as much bacon as required (the bacon ends come in a #3 bag) cover and place in a 350degree oven until the bacon appears done (all visible pieces Have had their exposed fat turn clear)

Don't burn your mouth on a sprout until they've had a chance to cool
(I know you will anyway:)

I would give more precise instructions but I'm still working them out.

Last time I did this I included several red-skinned potatoes, that I cut in 1/2" thick slices

If you ever discover anything better than Potatoes cooked in Bacon fat, tell the world!

I boiled a whole corned beef for 3 hours and threw it in the refrigerator overnight. Next morning, I diced it up. In a large sauté pan, I put a diced whole onion, 5 cloves diced garlic, 1 chopped red bell pepper and fried until the onion started to get translucent. I then added the corned beef, salt, pepper, 1 tsp Gebhardt’s chili powder & 1 package of frozen potatoes O’Brien fried everything, turning every so often until the mixture had a good crispy crunch. Fried some ranch eggs sunny side up & put those on top of each plate of my version of corned beef hash & got rave reviews from the friends I cooked it for! You can Also sub sausage or leftover steak cubed for the diced corned beef! Have a great Xmas everyone!

Just noticed the can has a "regular bottom". That means if I put it in the fridge over night. Next morning I can open both ends. Push just enough out for 3/4" slices.
Six slices to a can, 3 today, 3 tomorrow.

Just like I used to cook it in the long gone days of Bachelorhood. A Poached egg on each one.

Love the stuff and there is nothing like it on a sub-freezing day in camp cooked in a cast iron skillet with eggs over the fire.

Unfortunately, I started a low-carb diet three months ago and have not been able to enjoy it since. But I have lost 30lbs...

Funny story...

Years ago, my ex-wife and two young kids and I were traveling up from AZ to Moscow, ID and stopped in New Meadows, ID for supper. We stopped at a little cafe on the South side of the main drag through town.

We were the only customers that time of night and a somewhat distraught looking teenage girl came out and took our drink order and left us with menus and two very grouchy and hungry kids. About a half hour goes by and there is no sign of the waitress.

Soon, another waitress shows up and apologizes and explains that our waitress just found out that she was pregnant. Our new waitress was her best friend and worked at the steak place across the street and would take our order. But, the cook was the father and he and our former waitress were out back freaking out, so the cook from the steak place would have to substitute.

Now, normal people would have just left in a huff, but my ex and I were intrigued by the drama unfolding and decided to see how it played out, so we ordered chicken strips for the kids, fish and chips for me, and my wife ordered her favorite sandwich, a rueben.

A few minutes later, the young substitute cook comes out and asks my wife what a rueben was. She patiently explained that it was corned beef, sauerkraut, and thousand island dressing on rye. He seemed satisfied so went back into the kitchen.

45 minutes later, the waitress brings us our food. Smells delicious and looks good and we are all starving by then.

Wife takes a bite of her sandwich and suddenly stops. Slowly puts it down. Swallows hard, and starts laughing. She took the top piece of bread off to reveal that the cook had prepared it with corned beef HASH.

She absolutely hates corned beef hash. Then we discovered the kid's chicken strips were raw on the inside. We decided that we had had enough and left. We ended up driving another little ways up the road and stopping at a fast food place.

Laughed about that experience for years.

I think that a lot of people (but not on this thread) really don't know what the food "hash" is. It's really nothing more than a dish made of any cooked meat cut into small pieces and cooked again, usually with potatoes ……
The kids (then age 12 and 14) would not even try it. Mom did just to please me but she said it didn't really please her palate (she did not like it either). I loved it.


Sometimes we just have to make “me” food [emoji1638]!

Yeah you are correct. We always made extra beef roast with potatoes onions .carrots whatever and the left overs were run through the meat grinder. Then fried crispy.

Tomorrow making Corned Beef Hash.

Found out my Daughter has decided to LOVE MK hash. Hope she doesn't try the real thing. But then it'll go on sale soon for St. Patrick's day.
One to eat, 2+ in the freezer.
