I can't seem to find it (for a long time) in the stores up here. Must be slow seller and no one stocks it.

So I figured if I posted a plee here on Gourmet Corner that some od you ol Boys or your better halves would have a KILLER Manhatter Clam Chowder.

Please give me your's

This one makes 6 servings
< 2 tablespoons vegetable oil
< 1 cup sliced onions
< 1 cup diced carrots
< 1 cup diced celery
< 1 tablespoon dried parsley flakes or 2 TBSP chopped fresh
< 1 16 ounce can tomatoes, drained (reserve liquid)
< 9 ounces cooked potatoes, diced
< 1 teaspoon salt
< 4 whole black peppercorns, or use ground pepper to taste
< 1 bay leaf
< 1&1/2 teaspoons of dried thyme
< 1/4 teaspoon dried Basil
< 12 ounces of canned clams(reserve liquid)

Heat oil in a medium saucepan over medium heat. Add onions, cook until tender(about 5 min). Add carrots, celery and parsley. Cook, stirring frequently, approx 5 more minutes. Add tomatoes, potatoes, salt, pepper and the remaining spices.
In a 1 quart jar or bowl, combine the reserved tomato and clam juice, and add water to make one quart. Pour liquid over the vegetable mixture and bring to a boil. Cover, reduce heat and simmer for 45 minutes. Add the clams and simmer for 15 more minutes, covered. Remove and discard the Bay leaf before serving.
