You can also substitute cauliflower for pasta. My wife does the Trim Healthy Momma diet. Tastes pretty good.

I don't much care for it either and the wife really can't stand it however when cooked in things it really doesn't taste like cauliflower. I make a mashed cauliflower dish that has fooled many people into thinking it was mashed potatoes. I've also used it in place of rice by sauteing it in a little olive oil first and I've got a recipe for cauliflower gratin that is amazing.

Sucks being diabetic but you do learn to live without the high carb foods.

Well, there is couscous, made from the same sort of wheat as pasta. The pictures in Wikipedia are deceptive, since the stuff sold in supermarkets is usually in much smaller grains, which you would have trouble distinguishing from rice from three feet away. You can see numerous varieties illustrated on eBay.

Couscous looks healthy but it is really a simple carb, with nutritional value similar to white pasta.
Not good for people trying to avoid Carbs, Quinoa is a superior carbohydrate compared to couscous.
