With my Master built smoker. When set low enough for jerky the coils do not stay hot enough to get the wood chips smoking. I thought about leaving the cover off and lighting the wood with a torch.
Seems anything under 200° and the wood doesn't burn. Cycle time is too short. The box just holds heat too good.
I might try leaving the door open to the latch so the coils need to work.

I use an outside box, with a connecting piece of stove pipe. You can cold smoke easily that way.

Piece of foil placed in an upper corner of the door. Close the door on it creating a crack to bleed heat.

When I had my old electric one I just cracked the door. Its why when I built my new one I used a separate smoke generator that has a propane burner with a pipe to the box for smoke and a couple electric elements in the box to control heat.

I hear ya, but I am stuck with this one for a while, works good for all else. I just wanted a little more smoke on the jerky. I had it hotter for the first batch and it worked fine, second batch was sticks so I turned it down.
I really don't want to cut a hole in this one.
