We keep a glass jar of bacon drippings in the refrigerator all of the time. It seems like it can never 'go bad'.
I would think that 'tallow' (rendered from fat) should last equally as long ...

Freeze it. I render 10# at a time, and put it in 1pt freezer jars. Stays for a long time.

after its truly rendered, just put it in a canning jar with a lid and store in a cool, dry place. no need to freeze or anything else. wife does about 50 pounds a year from our hogs.

Just as rancher1913 says it doesn't spoil. If it has settlement in it you cand mix it with water bring to a boil and the water and drugs will settle to the bottom if you don't have a way to filter it.I also use a small amount in my bullet lube in case issis shows up around here.

we heat it up on the wood stove, then run it through coffee filters, pours in jar clear then sets up thick and white.

there are accounts of lard still washing up in the UK from a ship that either sank or was sunk in one of the world wars ... the containers have succumbed to the seas but the lard once scrapped clean is still usable today ... a cool place helps stop it from going rancid and it seems to have less of a tendency than tallow to do so but either when properly rendered last heap o long time
