I am using an NOE 255 gr mold you can get it with or with out gas checks. it does good for me.

I have several 454 revolvers and just about any good cast bullet will work well ! I have the LBT 300gr gc lfn and two Mountain mould's a 260 gr gc lfn and a 275gr pb tc , I have also tried the Lee 255 gr rf and the Lyman 454424 255 gr swc all shot excellent from my guns!

A good plinking load between 1,000 to 1,100 fps with any of the above boolets, is using 454 brass with between 8.0 to 9.0 grs of Tightgroup powder and I use a( small pistol primer)

There is quite a range of boolit weight to pick from when considering the 454 Casull. I personally have had a bit better accuracy with 300 grain and up boolits however 250-260 grainers worked well too. What weight of boolit are you thinking about using?

It's likely going to take a semi-custom or custom mold maker. NOE comes to mind as being the least expensive:

I've had a few different designs put together over at Accurate Molds.
The one I've settled on:

Another thought is to have the GC shank of the Lee 300 RF taken off or reamed out.

You can ask Buckshot on the forum possibly. I think he has done this for folks from time to time. There may be a few others as well who can do this for you. May want to ask in the Molds.....Maintenance and Design. Something along the line of Can someone remove the GC shank on a Lee mold?.

I have dedicated molds for the .454 from 255-325. I also size several .458s down. Since I mostly shoot fairly hot loads most are GCs but several are PBs or GC/PB combo in the mold.

Since the late 70s/early 80s when I got my first FA Cassul & Dick C said use 265s for deer size game & the 300s for anything else, I have found that to be about right.

For your stated use for deer anything in the 265 range should be fine but if you want 300s, I don't think it would be any problem going slow. I also prefer something around 300 & have several from 290-310.

I think Lee has a 300gr but don't know if its GC or PB. NOE has numerous molds that would fit your needs, but so do the other guys. Like most .45s I find the Cassul is accurate with most good fitting bullets.

Don't know about a 13" Encore but I had a 10" FA & it was hellishly accurate with 300s.
