So I'm setting up my 550 for 38/357 using dillon dies. Can someone tell me if the crimp die is a roll or taper crimp? It looks to me like a taper crimp but maybe I've not got it adjusted correctly.

It's a profile crimp Dillon calls the "Accu Crimp" for the revolver dies. It works well with the 357/38. Look inside it and you will see a small lip. I have one and does a nice crimp. You may need to lower the die down a little and check the round with a cartridge gauge.
