In the 1950s, my dad worked for a large company building schools paid for by the government. Had to catch up to the commies after Sputnik. Everyone lived in tow-able homes. A Cajun gave dad a bucket of live crabs. Not crawfish. Mom got the job of cooking them. My memory of this is standing on the couch -with my mom holding my baby sister- as one of them crawled out of the pot and started heading our way.

My wife's family is located here and in new york. The day of her wedding party her father was cooking up some racoons in a stew. Sure was tasty. Frank

Cooking coon, it helps to treat it like turtle. Boil it first, skim off the surface until clean, then start fresh to do whatever cooking you want.

That is why my relatives only have my PO box address. Now if I can just remember to buy a lotto ticket now and then.
