Does anybody have a good mix to make bear sausage? I am thinking along the lines of breakfast sausage

any sausage mix for pork will work fine. Mix at least 50 percent ground pork but in with your bear meat and trim all the fat off your bear meat. AC Leggs, Witt and lem all make packaged breakfast sausage mixs that are good.

AC Legg is the one I use for deer sausage, I like the #10 mix. They make #6 which is less black pepper and no red pepper, and now I see on their site they have started calling things "blend 109" and they do still have a "blend 10." They have about any kind of seasoning you could throw at bear meat..

blend 10 = most popular sausage seasoning. A true "Southern Style" seasoning. It has relatively high level of sage, red pepper and black pepper. Some red pepper is crushed to be visible in the finished product. I still add crushed red pepper and more sage to this mix.

blend 109 = hot pork sausage

blend 6 = Similiar to Blend #10, but contains slightly less black pepper and no crushed red pepper.

blend 29 = For those processors who want to produce sausage with an intermediate spice level. It contains less sage and pepper than Blends #10 & #6.

blend 7 = mild pork sausage seasoning that contains red pepper, sage and black pepper.

try here. http://www.askthemeatman.com/weekly_special.htm he deals in both witts and legg. Also his summer sausage and snack stick house mixes are the best ive ever found.

I use my deer sausage and "brine" it in beer and sliced onions overnite. Grill the sausage and onions, very delicious.
