Looking for a great old time vintage hearty thick tomato soup also would like a good recipe for a tomato based tortilla soup.
I can my own tomatoes and would like to include using them. Looked on some cooking sites but too fancy need just plain country home cooked soups.

I'm with ya on the easy. Try putting "easy" into your search into google.

I love cooking, but don't feel the need to buy 83 ingredients to make a burger lol.

For a soup using your home canned tomatoes.


In a large enough pot, add:

A couple of quarts of tomatoes.

The spices your like
- for tomato, celery and onion would be nice
- If you like spicy, add some of your favorite hot sauce.
- basil is always nice with tomatoes

Bring the pot to a boil and turn down to a simmer. Simmer until it starts to thicken up.

Break up and add corn tortillas or corn chips. Continue to simmer until desired thickness.

If you use fresh celery or onion, cook until they fall apart. Add more water if necessary.

Instead of basil use mexican oregano for tortilla soup. Otherwise Jim has it down.

16 ounces red salsa, medium hot
2 cups chicken broth (canned works fine)
2 cups shredded, cooked chicken (I just pick up precooked at Costco)
2 flour tortillas
1 avocado, ripe and diced or you can use sour cream
1 small bunch cilantro

Heat salsa in a little pot on the stove

Once it starts to bubble, add the broth and chicken and simmer until chicken is heated through, about 5 minutes

While it's heating, place a tablespoon of oil in a non-stick pan over medium heat and cook tortilla until just beginning to get crispy and brown on both sides

Remove tortilla to a paper towel, remove oil then slice into thin strips

Serve by putting some soup in a bowl, and topping with avocado or sour cream, tortilla strips and chopped cilantro
