just did a batch of small link breakfast sausage. Didnt have any casings so ordered some from lem instead of my normal place. What a pile of ****! Some of the casings were so small they wouldnt go over the small horn and most of the others broke so easy i didnt get but a few strings of good sausage. NEVER again will i order there casings. then the small pack I bought was suppose to do 25 lbs of sausage and i ran out before i got all 12lbs done. Ill go back to the meatman.com for all my stuff religiously after that fiasco

Did you soak them in water? When we used to make sausage in the store we would soak the casings for some time before making sausage. Rinse the salt off and soak. Just my two cents worth.

Good to know. I used a few LEM products this year and liked them but didnt use thier casings.

Butcher Packer has good stuff and good service if you do have a problem. I got a package of rotten casings and they replaced it no problem.

Ive ordered a few things from them and have allways been happy. My usual place is meatman.com Only reason i ordered from lem is i had a coupon they sent to my email.

I buy most of my sausage mix there. Theyve got the best summer sausage mix on the market in my opinion. If you get it add about 3/4 of a cup of brown sugar to 10lbs of meat and you will have people knocking at your door for more.

We used to buy pork shoulders, etc and grind them with venison for sausage. We've missed the window (in the dead of winter, on a Saturday) the last couple of years since having kids, but you're very much speaking my language. I LOVE summer sausage. Love it!

yes it is. they sell brand named fresh sauage kits but there summer sausage and snack stick mix is there own recipe and its great. Keep in mind when pricing things on there that theres no shipping charges. Also there customer service is right up there with dillons. If your not happy for ANY reason they will refund your money and probably let you keep the product anyway.

I have to hand it to you for doing your own. When I was a kid I used to watch them grind the meat, season it and then fill the casings. It would appear that its a lost art anymore or found only in small town one man butcher shops at least in my area. I especially liked the hot dogs they used to make.

Having had to travel to do repair work at a meat processing plant I can attest to the fact that everything from a pig goes into some type of product that they make. I personally love summer sausage but I find myself not even being able to eat it for several months after making a trip to the processing plant. I especially love those slush pack hams. Its amazing how they can throw a bunch of ground up pork into a plastic bag and from there it goes into a mold which is part of a cooker and when its done out pops a boneless ham.

Formed processed ground pork is only slightly more “ham” than imitation crab is “crab”. With the formed "ham" it's at least pork whereas imitation crab is formed white fish.

Ive detested hotdogs most of my life because they showed us a movie in elementary school about what goes in them. I allways like bratts because i figured at least the meat was corser so it would harder to put growned up guts in them. I like making my own. I know the only thing in them is good venison and ground pork buts that grind myself. Same goes for my other fresh sausages and my summer sausage and snack sticks. Lloyd,

As usual you make good points. I was making a reference to the old time butchers that took pride in producing a good quality product. I can agree 100% with the quality of the "usual" hot dog. I don't find myself eating those either. Bratts are fantastic especially when your producing your own and can control the quality of the final product. I can tell that you don't do anything half way. I wasn't meaning to say that the quality product you are making for your consumption was in any way even remotely close to the junk the normal public purchase from the corner store.
