Scored some pork fat at the grocery store today, making some EYEtalian sausage this weekend! So excited I forgot to get some garlic and fennel seed.

I love that Italian sausage. I get my pork fat from a friend that raises them without hormones, drugs, etc. Last time I ended up rendering about 14 lbs of lard.

I'll have to go back and score some more. Just got enough for my last 10 #'s of wild pork. Stocked up on fennel seed and garlic tonight. Lucky I went back, they had pot roasts on sale!

Boring? No, but it won't be Italian sausage. Every pound needs a Tbs of fennel and a clove of gaaaahhhlic. The rest of my recipe is around here somewhere.

Wouldn't even consider making Italian sausage without garlic or fennel seed. You're right, it won't be Italian sausage. Chorizo isn't chorizo without garlic and cumin.

Never tried making chorizo, should probably try it since it's so hard to find good chorizo around here. Good boudin is hard to find as well.
