View Full Version : Some homemade blackberry jam

This past summer behind my house I decided to pick some of the blackberries that have been growing wild ever since I had part of the property logged. I didn't know what quite to do with them all, but I decided to fight the bears, the deer and even hordes of yellowjackets to get what amounted to four large cups to make some jam. After having thawed them out from the freezer I found a simple recipe online, that was equal parts sugar to equal parts berries, four cups to four cups. With the help of my son who wanted to mash the berries and stir in the sugar with a teaspoon of lemon juice, we put in a pot to boil and then poured the mix into two jars. There is no pectin but that's ok, the stuff is good enough that I know it won't last long enough to go bad.

This summer, our two mulberry trees were loaded. It was not difficult to get 2 gallons of mulberries a day. We froze a lot of them for smoothies, put some up as jam, and even made some mulberry crisp. I also found a couple of blackberry patches, and we put some of them up, too. What really surprised us were the apples. We had the biggest crop of apples ever. We ended up with 45 qts of applesauce, 9 half gallons jugs of dehydrated apples, 2-1/2 gallons of cider, and I don't know how many times my wife made apple crisp.

Definitely looks like it won't last too long.

We have tons of wild blackberries growing in our area.
As well as huckleberries, elderberries, and wild black raspberries.
The wife juices them with a steam juicer and makes jelly.

I have a large section of a tree cleared Blackberry patch that I go through each year to "graze" and pick berry's for later use. Almost quit year before last cause of the Chiggers; they got me so bad I couldn't sleep well for 3 straight nights and I looked like one red inflamed mass from the waist down. OutDoors OFF worked better for me last year.

My wife just made blackberry jam to send to our great grandsons who are with their parents at Ft. Campbell. We had to buy blackberries as the drought has made them unavailable here for several years. We did have a good crop of mustang grapes two years ago, which I rate right up there with blackberries for jelly/jam.
