I have a few boudin recipes saved away, going to be making some pretty soon, thought I might ask and see if I get a contribution from the best forum on the web!

I'm mostly interested in the spices and seasonings used to make it.

Salt,black pepper,red pepper,garlic powder and use the amounts to your taste.Mix some and let set long enough for the rice to absorb the flavor.

Absolutely right! That's what a Cajun cook would have on hand.
