I have been away from the hobby for a long time. I have finally been able to settle life's dramas, buy a home and now that I have a place to settle down and no one to spend ever dollar I make, I am very excited to be getting back to my favorite old hobby. Ok, here is the question, I do not yet have a lube/sizer of my own, all on back order at Midway, but the thought crossed my mind that if the heaters for these things don't really have a thermostat, could you possibly use one of the stick on thermometers like is use on a fish tank to get an idea what the temp is at?

Yes, you can. Ballisticast when they were still in business would put one of those on the machine they sold for lube/sizing. They work for getting the general idea of what temp it is at.

For that matter, a fish tank heater should work for a lube heater.
Just take it out of the glass tube and mount it in a the base.
