Well I just got finished eating a bait of fried Spam slices on whole grain toast. Now that is food fit for a king. I am so glad to live in a country where Spam is readily available, and one can still shoot cast boolits. Whoever invented Spam deserves a Nobel Prize, for his goodness to mankind.

When in Korea SPAM is very much appreciated as a valued gift. Great way to make points wiith the locals.

I'm fond of WalMart's store brand. High fat, high sodium, like real Spam used to be. Coupla slices of that in the pan, and there's plenty of grease to fry my morning egg. Fortunately high blood pressure is not among my medical dysfunctionalities.

The wife and I really like SPAM McBagels. This is a home made version of the McDonald McBagel. Nice big plain bagel, very lightly toasted, a couple of 1/4" thick slices of SPAM fried just so the outside is crispy, 2 eggs, a slice of our home made mozzarella cheese, nuked just enough to soften but not melt, and a healthy (?) schmear of the wife's homemade blue cheese dressing. What a way to start the day!!

Also grilled and cut into 1/2" cubes served with cubed cheese and crackers with our homebrew Pale Ale or Elderberry wine.

Fried liver and onions in a cast iron pan before spam. Spam is just a survival food for me. I guess that is why there is more than one channel on a TV set though. Not everybody likes the same thing.

Its a southern thing. Kinda like eating a "mess" of something. Funny you caught that as I read it and it didn't register to me as odd or different. I knew exactly what he was talking about. But then again I grew up and lived the majority of my life in the deep south.....

BTW, Spam should be its own food group. I love it any way it can be cooked, and when there aint a way to cook it then straight out of the can is just fine.

When I worked as a house parent for a boy's home we had cases of Spam donated and the man in the commisary complained that no one would utilize it. I shredded it , shredded some chedder, and mixed it in the scrambled eggs before frying them. The 16 boys I was cooking for (four were my own) loved it. They bragged on it to other boys to the extent that the other house parents wanted my recipie. Soon the commisary was buying more.

I like it on a baked potato. Mash the potato with your fork, add diced Spam and grated sharp cheddar cheese. Salt to taste.

Woooooooooo I like thin sliced liver fried with onions or heart sliced and fried. I'll eat spam but it just seems to be more of a survival food.

Cubed and fried then mixed in mac and cheese or scrambled eggs. Also fried and cheddar cheese melted on top for a sandwich. Limeted because of cholesterol but splurge every now and then.

SPAM run through a meat grinder with a diced onion and a green bell pepper, a diced potato and a shot of Texas Pete. Form into patties, 1/2" thick, roll in beaten egg, then cracker crumbs seasoned with 1/2 teaspoon each of salt, cayenne and black pepper, then deep fry and serve with corn tortila chips and refried beans with Coca cola.

This stuff is 94% fat free, very little cholesterol, and tastes like a mix of liver and spicy country sausage. It's actually quite good.

Yep Charlie it has a little cornmeal in it, and some wheat flour, sausage seasoning, fresh (not smoked) pork liver and pork jowl. All cooked, ground, and pressed into a block mold to set. Slice it thin and fry it crisp, nothing like it!

Spam and carp.....poor mans "Surf and Turf"..if you spend any time in Hawaii you will find Spam on many menus in local cafes, etc...it's sort of a national tradition...left overs from WW2 and just always held on...I ate a ton of Spam as a kid...we had fried Spam with fried cornmeal mush (with syrup) for breakfast...about 4 years ago I asked my Wife to fry me up some Spam and mush for breakfast and "pass the syrup"..it was horrible!! Guess we didn't know better in the 40's.

We ate it occasionally growing up. I have not had any since my marriage in 77 and don't miss it at all. Too many other meats close at hand to eat preservatives.

Not sure if it is Texas. I heard it at home as a child. My father came from way back in the Ozarks Mts. of Missouri. He used to say a bait of this or a bait of that meaning a mess of, or pan full, or plate full of various kinds of food.

Spam is great. Grew up on it.
Spam mac and cheese. Spam and cheese sandwich. Fried spam. Spam and cabbage. Deep fried spam. Raw spam in ramin. Spam and green beans.
Most popular way to eat it is a spam musubi.
Some here eat it at every meal.
Wouldn't know what to do without spam.
There is a spam cook book you can get from Amazon. It's written here by a local lady.

I'm guessing (based on the report of English roots) it may be a more Arkansas, Tex sort of thing. Never heard it on
the east coast part of the south - put on a pair of "paints" in NC, lots of other good southern saying. I like the
south and the good folks in it.

I'll mark that down as a linguistic lesson.

Would love to hear more about this. I've always been told that Spam was invented by Hormel in Austin MN and was originally called Spiced Ham. Got renamed Spam in 1937 after a contest was held to come up with a catchier name.

Back in the mid `60`s my family was getting the back yard ready for a "critter burning session" (a.k.a. a BBQ). A buddy saw a can of SPAM in the can cupboard and grabbed it out. He opened it and sliced it up about 3/8" thick then threw it on the grill. After a few minutes he turned the slabs and a few minutes more served it up. WOW!!! I never would have believed how GOOD it tasted grilled! You really need to try this simple way of having it, did I mention that you don`t need a bun or bread.Robert

When we say that we don't eat the bait that was before eating crawfish,shrimp crabs became poplar table fare.Here in east Texas a lot of the country folks would not eat the bait.The only bait they would eat was liver.I like all of it spam to salt bacon and think now that we missed a lot of good table fare.Eating a mess of something ment you ate enough to get stuffed or full.

Liver Mush
(6 servings) Printable Version
•1 fresh hog liver
•1 and 1/2 pounds of fatty pork
•2 cups cornmeal
•red pepper
•salt
•black pepper
•sage
Cook liver and fat pork until tender. Remove from broth the liver only and grind. Add corn meal, peppers, and sage to taste. Add enough of the broth to soften mixture. Cook in saucepan until meal has cooked, stirring constantly. Put in mold. Press down until cold. Slice and serve cold or broil.


One of North Carolina's best loved breakfast foods is that Poor Boy's Pate', Liver Mush. This delicacy, fried crisp and served with grits and scrambled eggs, is a wonderful way to start the day.

Spam is sold at the McDonald's which is directly across the street from the Honolulu hotel where Obama always stays and spent the recent holiday period. I imagine it is sold at McDonald's throughout that state.

People in HI have told me that Spam tastes just like boiled missionary, or so they were told by their elders.

I remember the first time I had Spam. Was helping a friend out at his Dads farm all day and by evening, we were pretty hungry. Got out a can of spam, cut it up and cooked it over an open fire, on a stick. Stuck the cooked slice on a piece of bread and thought it was mighty tasty. I like the bacon spam, sliced and fried in a pan. Then made into a sandwich with mustard and mayo. Pretty good. Course, I like fried bologna sandwiches too, got that from my grandmother. also like the cans of deviled ham.

My family, knowing what a Spam addict I am, (a can a week on average) sent me an "Official History of Spam" booklet they bought at the SPAM MUSEUM in Minniesoter. Yes, there really is a Spam Museum.

Quoting from memory, the Hormel folks were selling canned hams, but their retailers wanted something in a smaller can that a housewife could use up in one meal. The result was Spam, which coincidentally let them use up all those pork shoulders. The name is the acronym for "Spiced Pork And Ham", and story about the name being invented by an actor relative is true.

BTW in "British English" during the Napoleonic era the word "mess" also seems to have meant a single meal, as well as the organizations which fed groups of officers, (who had to feed themselves without assistance from the King, and at their own expense BTW, right through WW2), and then of course to the feedlots for the enlisted men.

Makes the Biblical anecdote about "selling one's birthright for a mess of pottage" make more sense. Literally selling it for just one meal, and a mighty poor one at that. Pottage in late medieval England meaning the contents of a pot of "stew" kept always on the fire, and into which all kinds of leftovers and scraps were thrown, against the possibility that day after tomorrow that's all you might have to eat. The French called it "pot a feu", and in modern times it has been imbued with the aura of a delicacy.

Ah yes, scrapings from the pigs head, mixed with some of the hoof meat to pretend it is something eatable! Grew up eating that mystery meat. Glad I can afford real meat, you can have what I would not eat before I turned to long pig.

Actually like the stuff. I ate it occasionally growing up, but dad, being a vet, didn't go for it very often. He would rather skip meat with a meal than eat it. Wife like it, and there are really way worse things.... some made with hog, some not.

My dad never made all that money working for the railroad. So when we went to the beach mom would chop up a can or two and add green sweet relish. Spread on bread and we ate the heck out of it. Love it fried on bagels, or hoagy rolls. Have a half dozen cans in the pantry. Frank

My Dad was a WWII vet so I'm sure he had lots of it in the Pacific. BUT I remember having fried SPAM as a kid and my Dad would still eat it. I still enjoy SPAM. The company had a building at the MN State Fair that had a more complete variety of flavors than is available in the U.S. as they do make some varieties for export. I don't remember all of them but we did try some and they were decent. Luckily no Vegamite flavored ones for the Aussies though...

Being a rather, uh, frugal type, I bought a can of generic Spam at the Dollar Store. I will usually eat anything but this stuff was horrible. Reminded me of reject hot dog stuffing in texture, and didn't even taste as good as that would have.

This does sound tasty, but may carry certain social ramifications. Think I will wait to try it when I am home alone and have no appointments for a day or two. Could be payback to the dogs for what they occasionally subject me to. :dung_hits_fan:

Heck, I sometimes take it right our of the can and just slice it and put it on a roll. Course being a type 2 diabetic doesn't do one good, but could die from a lot of other things. Tis but a short time to the tomb,While you're living zoom,zoom. Think of of the Gabor sisters said that. Frank

This does sound tasty, but may carry certain social ramifications. Think I will wait to try it when I am home alone and have no appointments for a day or two. Could be payback to the dogs for what they occasionally subject me to. :dung_hits_fan:

My cat came down with a stomach bug from something he ate(he eats EVERYTHING...) and had the runs. It was last winter and I had a fan in the bathroom pushing cold air towards the pellet stove. As he ran by the fan to try to get to his litterbox he couldn't hold it any longer... yes :dung_hits_fan: literally.. painted the floor for 20 feet... that fan got dropped in the trash...

Being a rather, uh, frugal type, I bought a can of generic Spam at the Dollar Store. I will usually eat anything but this stuff was horrible. Reminded me of reject hot dog stuffing in texture, and didn't even taste as good as that would have.

No ... you can't compare real Spam to dollar store generic spam ... you must have the real thing .
Generic spam ain't Spam .

Heads up on Jalapeno Flavored Spam ... It's not that it taste bad but they add ground Jalapeno peppers to the meat mixture ... which should be good but it tints the meat this unappetizing shade of meat-pink-green ...
if green meat bothers you ... and sitting there it does looks like it's been left in the refrigerator way too long ... there is just some inner mecanism in me that says ...don't eat that , it's gone green ! It taste good just looks Wonky !

Ah yes, scrapings from the pigs head, mixed with some of the hoof meat to pretend it is something eatable! Grew up eating that mystery meat. Glad I can afford real meat, you can have what I would not eat before I turned to long pig.

We called that "souse". Boar's Head calls it "head cheese"

Many years ago I was put into the Veterans Dept ,as a low grade clerical.....one of my jobs was to oversee hospital contracts for food .....and the meat patties (spam) spec had all the gruesome details of what went into it....like membrane wire brushed off bones ,gut mesentry,etc......offal,tails and hooves went into higher spec meats stuff.......yuuuuck....never eaten this kind of stuff again.......Next door to me is a Mc Donalds,I know the owner pretty well,I once asked him if he ever ate McDs food......he gave me a funny look.....the guy is a billionaire,and also owns a cattle feed lot and farm.

I grew up on SPAM, can't remember a Hunting, Fishing or Shooting trip w/o it. DAD could do amazing things with SPAM.
I've had at least 1 can of SPAM in My pantry since I got out of the Service in 1975. Eat it at least once a month.

Jalapeño SPAM is my favorite, especially for fried rice! It was out of stock for almost a year during the pandemic.

Any meat product that list "mechanically separated meat" has the wire brush stuff in it! If you are not grinding your own hamburger it probably has msm and body cavity fat in the mix. BTW there are some good YouTube videos on how to make your own SPAM!

Love me a grilled SPAMburger ! With lettuce tomato mayo cheese on a regular hamburger bun. Yum. And my Pops was a WII Marine that still loved SOS(aka chipped beef gravy on toast) .
