Everything worked out just great, thank you for asking. Good food and the whole family was over. A wonderful day.

Now on to sandwiches and soup. :) Sometimes I think I like the leftovers more than the meal itself.

I made carcass stock today, had cold turkey sandwiches with mayo for supper tonight. Tomorrow is turkey wild rice soup plus I have 2 pints of turkey soup base(I reduced the stock by 4) for the freezer.

Sounds great! I had to work today, but I'll be making soup tomorrow myself.

Buttermilk brine for my 18lb'er for 5 hours. Set out for 1 hour before going in a 400F convection oven for 20 min, then down to 350 for 1 hour 40 minutes. Cooked perfectly, checked by thermometer in multiple places.
