Yeah ... seriously ... BAKED donuts! I bought 3 special pans for baking donuts (bought them all over a period of time at various thrift shops for about $2.00 to $3.00 each from memory) and they make awesome tasting donuts that are not deep fried so even my picky, ever dieting little wife will eat them (in moderation of course). I made a big batch yesterday and I took them up to our Trap Practice at the gun club today and they were a big hit. In a pinch you can just "freestyle" them on some cookie sheets and although they won't come out looking like "store boughts" they'll still tasted just as good. Here's the recipe that I used for mine. The icing glaze is optional and for today's Trap shoot I took along a small shaker with powdered icing sugar in it and left it up to the "eaters" as to whether they wanted theirs plain or "powdered" ...
Baked Pumpkin Donuts
INGREDIENTS:
2 cups all-purpose flour
1/2 cup packed brown sugar
1 1/2 teaspoon baking powder
1 1/2 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup canned pumpkin
2 eggs
1/4 cup milk
1/4 cup shortening, butter, or margarine, softened (but I substitute ordinary Canola cooking oil with great results)
For Icing:
1 cup sifted powdered sugar
1/4 teaspoon vanilla extract
3 teaspoons milk (more if needed)
DIRECTIONS:
FOR DOUGHNUTS: In a medium mixing bowl stir together flour, brown sugar, baking powder, pumpkin pie spice, salt, and baking soda. Add pumpkin, eggs, milk, and shortening, butter, or margarine; beat with an electric mixer on low speed till mixed.
Spoon the mixture into a pastry bag fitted with a large star tip with a 1/2 inch opening. Pipe onto 2 greased baking sheets in 3-inch circles.
Bake in a preheated 375F oven for 10 minutes, or till golden brown. Cool doughnuts on a rack over waxed paper.
FOR ICING: In a small mixing bowl stir together powdered sugar and vanilla. Stir in enough milk to make a smooth icing of glazing consistency. Spoon icing over doughnuts.
