Looked like he didn't get too much hair on the meat and was fast.

It never comes off like that for me. But it's always a few hours after the kill till I get to it. I've seen it done faster but it involved a winch.

Don't forget tying a rock or tennis ball into the hide then pulling it off with a vehicle. I'm sure there are some youtube videos on it.

I prefer the air hose method if still warm. I worked in a butcher shop as a kid so the right knife and give me 5 minutes and it is done.

I'm ALOT slower and methodical - but I don't get blood on the walls either...

As a guy who used to tan a lot of deer hides, not impressed. He ruined the hide. I hang them head up, and pull the hide. If I have them hanging already, I can skin six in under 45 minutes, without a cut in the hides. That included disjointing and removing the legs.

I have him beat! I've killed/gutted/skinned AND TENDERIZED two deer this month alone and never slowed below 60MPH.[smilie=b:

Well I skin mine in about 10 minutes per without defleshing the skull. I've seen the air hose trick too. Who cares how fast it is if your damaging the end product.

Who drags/loads an undressed deer? The wind pipe & guts spoil very quickly. A truck is less work & faster.

I was told to dress and cool a deer as soon as possible. That is why it is called FIELD DRESSING. Pulling the hide off with a vehicle is faster. From the way he pulled the hide off that had to be a warm deer.

You'd be surprised how common it is.

Plus he threw away the good belly meat. Wasteful.

My buddies deer camp is set up to process deer just this way. They skin then gut while hanging and end up with less hair on the deer as a result.

Exactly what I thought too. I try to get as much as possible out of mine. I just wish I had a good mentor that could teach me proper so it didn't take so long to process.

Speed isn't the focus, efficiency is.

With skinning, pull more than you cut. Only cut when necessary. I don't save antlers so I skin right to the back of the skull to get all that neck meat.

Tenderloins and backstraps are easy to remove. Hindquarters just follow the seams of the muscle groups to remove from the bone. Front quarters follow the bone. Having a picture on the wall of an arm and shoulder bone helps to visualize what's under the meat. Ribs I just strip for stew meat or grind.

Once the meat is boned, you have choices whether to steak some meat out or leave in roast form. If you cut into steaks right away, it will save prep time. If you choose to cut steaks out of roast portions when you thaw and prep the meat, it will save butchering time. Depends where you want to save it but it's a wash. To save butchering time, I like to leave most everything in "roast form" with the big muscle groups. I'll take the rounds and sirloin tip from the hind quarters and just wrap as is. Backstraps I will cut into steaks. Front quarters I usually use for grind. Neck is roasts and jerky. I leave the silverskin on for roasts, as it helps protect against freezer burn. For steak portions or grind, I remove it right away.

This year if I get a deer, I plan on saving one whole leg for a "caveman roast". Season an entire hind leg with a dry rub and roast it or BBQ it low and slow. Way less butchering and I can feed my family plus three inlaws' and their kids off of it at one time.

That is one thing I love most about butchering my own animals. I get to pick what I want done.

I don't go that fast, but I also don't stick my knife in the hind leg to save time.

Don't forget tying a rock or tennis ball into the hide then pulling it off with a vehicle. I'm sure there are some youtube videos on it.

I've seen that video. Its from a guy in Pennsylvania who hunts with a 50 cal flintlock. He used a golf ball I think in the video I saw. Peeled the hide right off after the lower legs were removed.
