Thanks mates, problem solved!
Erik from Magma swiftly helped me out.
This thread can be erased :)
That's a puzzler, if the display shows temp is going down while the pot is heating up, you probably have the thermocouple connected backward. It has + and - wires and has to be hooked up correctly. No damage will happen if backwards, just confusing behavior.
Seems like you'll need to score instructions somewhere, I googled it and found next to nothing but their ph # is here-

Maybe they can tell you the brand of the controller, that'd make researching more successful.

Silverbullit,
What you downloaded was the data sheet. Here is where you will find the manual such as it is.
http://www.instrumart.com/assets/TTMJ4manual.pdf
There is a set of menu options, input table, and sensor options. Also some troubleshooting tables on the last page.
Maybe not all of your answers but more than you have now.

Erik from Magma helped me solve the puzzle,
it was a real simple fix - just reversed the sensor (two cables red/white)
An voila - it rocks! :)
Thanks mates for your help, and thanks Erik for giving me the fix!
