I smoked a bunch of trout this spring and am looking for recipes for ways to use it,dips or whatever you might have made.

Here's a dip I came up with a few years ago for smoked fish. Usually use salmon but have used it with smoked browns and lakers. It works pretty good for me.

SMOKED SALMON DIP

4-6 OZ SMOKED SALMON
1 BLOCK CREAM CHEESE
8 OZ SOUR CREAM
1 PKG LIPTON ONION SOUP
½ TSP MINCED GARLIC
½ CUP GREEN ONION TOPS
FRANKS LOUISIANA HOT SAUCE TO TASTE
SALT AND PEPPER TO TASTE

I do this with steelhead, but should work well with trout also.

I brine the fish in a cooler with 3 cups of brown sugar and 1 cup lemon juice and enough water to cover the fish...this takes 2 hours
then I pull the fish out and put some cajun spices on it and smoke it.
debone it and mix in with a tub of cream chease.
I personaly like dill so I add a ton of dill

I just take a block of cream cheese and soften it in the microwave. chop up an onion and take about a 1/2lb of smoked trout and mix it all together. to me adding much more then the onion hides the flavor of the fish. this goes good on ritz crackers. to be honest though i prefer salmon for fish dip.

Oh man, I had some smoked lake trout and I don't think it would last long enough to be made into dip. My buddy made it after his trip to Champlain. good stuff.
