One my boys love.

1 cup vinegar
1/4 cup soy sauce
1/4 cup worchestershire sauce
1/4 liquid smoke

Throw in freezer ziplock bag. Add roast cut into 1/4" thick slices, leave for at least 1 hour, over night is fine. Layout on dehydrator and sprinkle with KC steak seasoning and run until desired dryness. If you cannot get KC steak seasoning, use
2 parts salt
1 part pepper
1 part garlic powder

Not to steer your thread but can I add mine?

There is a muscle in the rear of a deer ham that looks like a 2x6 tapering to 2x4 at the bottom. I get this single muscle and trim it of ALL fat, (even the tiniest bit of deer fat will ruin jerky) put it in a freezer bag and shape it into it's natural rectangular shape in a dish or container that will keep it shaped, and freeze it. Thaw it just until it will bend and run it across a meat slicer when it's still half frozen, slice to 3/32" thick pieces.

Marinate several hours in:

1cup teriyaki sauce
1/2cup soy sauce
1/2cup worcestershire sauce
2tbsp onion powder
very tiny bit of liquid smoke or none at all
coarse ground black pepper <-- LOTS

Lay slices out in a dehydrator and run it until done..

Can also add ground habanero or other dried ground pepper as well..
