View Full Version : Excellent fresh fish marinade.

A friend at the little mom and pop grocery store in town gave me some fresh caught white perch yesterday.
I'm normally not one to accept free food but she insisted that I take them since she had caught so many.
I came up with a "marinade" of sorts that turned out really good.

Scale, gut and head the fish. Rinse in water and drop them in a bowl or place them in a zipper bag.

1/4 cup olive oil
4 teaspoons lemon juice
2 tablespoons worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons Tabasco Chipotle sauce (or your favorite smokey hot sauce)
1 teaspoon kosher salt

I used a blender to mix the ingrediants, but you could probably wisk them all together, you're trying to dissolve the solids more than you're trying to get the oil to mix with other liquids.

If you use a zipper bag just dump the concoction into it and shake it up real good.

Go prep your BBQ grill now, by the time you've got it heated up, cleaned and oiled you're ready to go.
Big fish take longer, handsize fish need about 4-5 minutes per side, use a brush to baste each side after turning.

Don't forget to cut slits on each side of each fish!
