Cajun season has been closed up here the last couple of years, not enough of them to go around I guess. lol

Some are stringy, most are tough, some carry a little too much fat to make good sausage...

LOL Dale, I have spent a little time in Lowsiana, and for the most part loved it, especially the groceries. I do believe some of those folks can make chicken feathers taste good. lol
BUT it is WAY too hot, even in the winter except for a day or two at a time when a norther blows in. lol
Thanks, that's very informative-and it makes me a bit homesick, too!
