A friend sent this to me via email. A kinda take off on jambalaya, with pasta instead of rice. I tried it tonight and it wasn't good, it was like outa sight! I used 2.67# of country ribs--pork butt area cut into rib like pieces. Anything from that area of the porker and trimmed out ought to be fine. Also used 1# of my smoked venison sausage. What flavors and textures!! This makes a biggggg pot, so don't skimp on the pot size. "Wow"

Bet this would be mighty good with the egg noodle recipe I posted recently instead of the fettuccine. Thanks for posting.

That is good recipe and is basically the base of all jambalaya recipes down here in LA. For the pastalaya, instead of adding water to cover the noodles by 1/4" it is better to add 40 oz water for eveery pound of pasta. If you want to do jambalaya, just add 1.5 cups of water for every cup of rice.
