When mounting the 30mm Ultra Dot on a Ruger Super Redhawk would I need to use medium or high rings? Also what are the best 30mm rings to use? Need to go aftermarket or does Ruger sell these? Thanks!

Ruger has 30 mm rings:
30MM 42MM Medium 5K30 4K30
30MM 52MM High 6K30 5K30

You will have to decide on medium or high yourself, but I see no reason to use high rings for a red dot scope. Note that the front and rear rings are different. The front medium ring is the rear high ring (5K30).

The ultra dots that I have came with rings and those worked fine.

Not on a SRH. If the original rings for the SRH are not used, Ruger will trade you for 30mm.
There are after market rings too.
Weigand makes a base so you can use the Ultra Dot rings or Weaver style rings.

Yes it's true the rings are two different sizes for the S R H I think Med would be fine.
The front ring will be taller to even up with the rear ring.
Warne makes a set that are Q D for the S R H I spoke with them and Have used there Q D rings in the past on a rifle and they DO return to zero, makes for easy cleaning, not having to work around the scope. But they are pricy $$ about 80$$
