My guess is sycamore. I have some quarter sawn sycamore that looks very similar.

I love the grips on the pistol in the third picture. It would look great laying on a desk of matching wood. Might be too pretty for a carry gun, but would make great grips for a presentation pistol.

Sycamore
are really nice!

I would like the holly and sycamore better on a blued or parked frame, better contrast. The maple burl and fiddleback are really nice on stainless and I am sure would be even nicer with some contrast against black.

I like them all. I still don't have any thing against walnut or cherry.
The Sycamore are not my most favorite because around here Sycamore is not that highly thought of.
With no more wood than it takes to make a set of 1911 grips I like one of the better grades of wood.
