I hear all this about the GC coming off of the bullet before it makes it to the target.

How much does it really affect accuracy?

There's a chance it may not affect it enough to notice. There's probably a bigger chance you'll get wild flyers unless the GC comes off the exact same way at the exact same time at every shot. Not too likely that'll happen. Best the GC stay where God and man intended it to.

I have had it happen enough to know a little about it
IMO bore size has a little to do with how wild the flyer will be
How fast you push them probely has something to to do with it also

Take the 223
A 55 gr bullet going 1600 fps ( my tree rat load )
I can get normaly get a 1.25" 50 yard group
But I had a problem with a batch of GC's and the sizer die

I would get 3 or 4 in 1.25 and the other 1 or 2 would open the group to 6+" , sometimes I would lose a bullet off the 24" x 24" target backer

Anneal your gas checks and it won't be an issue.
