View Full Version : Pork Shoulder Adobado

I have a candidate for the absolute best way to cook a pork shoulder roast. Debone it and slice it thick across the grain, tenderize it, (I use and recommend the Jaccard tenderizer.) then marinate in adobo sauce. Grill it hot and fast, rest for a while in a 180 degree oven, and enjoy the most delicious pork steak you ever had. I make my own chipotle peppers by smoking homegrown jalapenos until dry. The recipe is as follows:

Adobo Sauce

20 chipotles
1 large onion, diced
1 T. minced garlic
2/3 c. apple cider vinegar
1 small can tomato paste
6 c. water
1/2 t. salt
1/2 t. cumin
1/2 t. oregano
2 T. Brown sugar

Put everything in a saucepan and simmer until reduced by about half. Puree in food processor or blender. Water bath in half-pints. If you prefer, cut the recipe in half, and refrigerate in a pint jar.
