Pork belly dry rubbed with vinegar, garlic, onion powder, paprika, oregano, cumin and brown sugar. Pork grind seasoned with fennel seeds, rosemary, black pepper, kosher salt, sage. My plan is to treat the meat as such, lay out a pork side then put a layer of the seasoned grind on top of it, then roll the pork belly around it, and cook it low and slow at 250 degrees. I was going to smoke the belly for bacon, but don't have a smoker yet so this was the next best thing.

I have a hard time imagining what you are describing. Can you take a few pictures?
Can you quickly invent smell-a-vision? How about taste-a-vision?

OK, finally got around to it.

Held with toothpicks, seasoned the pork belly in a salt rub. Going in the oven at 250F for a few hours until done.
