The wife made this last night and I loved it,
thought I'd share it with all of you here.
Sweet-Potato Pound cake
1 1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 baking soda
1/8 teaspoon salt
1 stick unsalted butter, at room temperature.
3/4 cup granulated sugar
1/4 cup light brown sugar
1/2 teaspoon vanilla extract
1 cup lefy over mashed sweet potatoes
2 eggs, at room temperature
non-stick baking spray with flour.
1/2 cup chopped pecans
1) Preheat oven to 325 degrees. in a medium bowl, sift flour, baking powder, cinnamon, nutmeg, baking soda and salt.
2) In a large bowl & using a electric mixer on medium, cream butter, sugar, vinalla until light and fluffy. Blend in cooked & mashed sweet potatoes; then eggs one at a time. With mixer on low, add add flour mixture in thirds; blend just enough to combine.
3) Spoon batter into greased 9" bread pan. Sprinkle pecans on top batter. Bake for 65-75 minutes
