did up 36 lbs of it today. Got to get up early and get the smoker going! I love this time of year!

I dont have a recipe. I use a prepackaged spice kit. I buy it at "askthemeatman.com" Its probably a bit more expensive then createing your own but ive not ate better summer sausage and ive had everyone whos tried it say the same. One trick ill share though is wheter you buy a spice kit or make up your own recipe add about 3/4s of a cup of brown sugar to the mix for every 10lbs.

I make 20lb batches,10lbs of deer +5lbs pork+5lds of beef.taste better than store bought.with or without the cheese and jalepeno its better.

starting the second batch this morning. The grinding is a job i dont care for especialy the second grind. Id sure like to replace my #8 grinder with a 22!

well got it all smoked today and did up a batch of 30lbs of breakfast sausage too. going to have to kill some more deer soon the collection of scrap bags is getting low. Still got to make one more batch of summer sausage and my burger

Thanks for the site (and brown sugar) tip! I've had rave reviews from my dinner guests on Cabela's brat seasonings but the kit is a bit pricey.
