I almost always just toss some in with my green salad. Eat some by it's self and once in a while I make a toasted cheese and crab sandwich on a hoggie style bun. Well OK my wife makes the sandwich but I'm the one who eats it. Dennis

simple fare, it's not fancy or pretty, it is good and easy to fix.

2 large onions - chopped
1/2 cup green onions - chopped
2 stalks celery - minced
1/2 pound butter
6 cloves garlic - minced
2 - 10 3/4 oz. cans condensed cream of mushroom soup
1 - pound picked crabmeat
toasted bread- at least 2 slices per person ( I use 4 for my serving )

Saute the onions, green onions and celery in butter till clear but not brown.
Add garlic and saute 1 minute. Stir in soup and simmer 20 minutes.
Fold in crab meat and simmer 5 minutes. Turn off heat , cover and let sit
5 to 10 minutes. ( flavors meld ). Serve on toast bread cut diagonally,

Great with fresh sweet corn and beet and onion salad.

That'll work, except I substitute Zatarain's Crab and Crawfish Boil. (http://www.zatarains.com/Products/Seafood-Boils.aspx)

I think in Louisiana it might be against some law to boil crabs in anything other than Zatarain's crab boil. I've lived here all my life and every crab , shrimp and crawfish I ever ate boiled were done in Zatarain's. Lord knows what we would do if that co. goes out of business.

Dale knows what he's talking about, try Zatarain's Crab Boil and you will never go back.

If you want to elevate this dish to near mystical status add in a generous amount of ricotta cheese along with the parmesan. This same recipe works for shrimp and a mix of crab meat and shrimp. jaysouth has a winner with this dish.

Classic Creole Crab Cakes

•6 Tbs. butter
•1/3 cup all-purpose flour
•1 cup warm milk
•1/2 tsp. salt
•1/4 tsp. white pepper
•2 green onions, thinly sliced
•1 tsp. chopped fresh tarragon (or 1/2 tsp. dried)
•2 lbs. lump crabmeat
•1/3 finely-chopped red bell pepper
•1/2 cup plain bread crumbs
•2 tsp. Creole seasoning
•2 oz. clarified butter
•White remoulade sauce:
•1/4 cup mayonnaise
•2 Tbs. Creole mustard
•1 Tbs. lemon juice
•1 tsp. Worcestershire
•Dash Tabasco
•1/4 tsp. granulated garlic
1. Heat the butter in a heavy saucepan over low heat. Add the salt, white pepper, and flour and make a blond roux. Whisk in the milk until the blend has the texture of very light mashed potatoes. Cool to room temperature. (You have just made a béchamel.)

2. Pick crabmeat of any shells, trying to keep the lumps as whole as possible. Combine it in a large bowl with bell pepper, green onion, and tarragon. Add a scant cup of the cooled béchamel. Mix everything well with your fingers, being careful not to break the crabmeat.

3. Season the bread crumbs with Creole seasoning, and spread them on a plate. Using an ice cream scoop, scoop up balls of the crabmeat mixture. Gently form them into cakes about three-fourths of an inch thick. Press them gently onto the bread crumbs on each side, and shake off the excess crumbs.

5. Heat the clarified butter in a skillet. Sauté crab cakes until golden brown on the outside and heated all the way through. (The way to test this is to push the tines of a kitchen fork into the center of the cake, then touch the fork to your lips. That will tell you whether the heat has penetrated all the way through.)

6. Mix all ingredients for the white remoulade and serve with the crab cakes.

Makes twelve large crab cakes.
