Do the Lee sizers just swage the bullets down or do they trim the lead off. How about the other brands like RCBS and Star?

The boolit is swaged to the diameter of the die in everything I have seen since the 310 tool dies which had a shoulder which sheared the sides off of the oversize slug.

My experience with the 1: Lyman 450 (same as the RCBS) swaged to size. 2: Lee push thru, swages the boolit. 3: Star push thru also swages the boolet. I am happy with all three, although the Star seems to be the easiest and quickest. (The Lee is very quick too, but there is the prep time).

Some early dies did not have a taper or lead-in section, the bullet OD was sheared off, just like a ball/bullet rammed into black powder revolver cylinder. All modern die have a taper at the mouth.

If there is flash on the sprue side, I run the boolit in base first. It swages it into the shank of the boolit.
Never saw one that trims, just swages.
