View Full Version : Pineapple upside down cake

I made pineapple upside down cake for the first time ever. Of course I used a cast iron skillet to cook it in. I used this recipe with modifications.

I only used 1/2 cup milk and added 1/4 cup pineapple juice from the can. Also added vanilla. I didn't have any cherries so didn't use them.

It tasted as good as it looks. My wife can't have any (gluten intolerant) and the kids are at college, so I had to eat the whole thing myself.[smilie=1:

One of my favorites. Also good if you scatter a few pecan halves in with the pineapple.

My wife made a rhubarb upside down cake yesterday.

I have been making this for our family's Christmas get together for quite a few years now.
I usually add about 1/2 to 1 cup of crushed pineapple to the batter. I also substitute all of the pineapple juice from the can and add water up to the amount of water called for in the recipe.
I have also made a thin caramel with the butter and brown sugar and added the pineapple slices and cherries to it in the pan. Then allow the pan to cool and pour in the batter.

After making this in a cast iron skillet (the best way) you may need to re-season the pan afterward.

I used to love my moms upside down cake until I had one made with fresh sweet pineapple.
I let em sit out till they get nice and yellow and sort of soft.

The fight. We were both teenagers. Had mom or dad been home we both would have been in some deep trouble.
