While wandering aimlessly in our nearby Lowe's store, I stumbled upon a lower thermostat for an electric water heater, item # 26359.
A small light bulb illustration appeared over my head.
Bought it, IIRC around 10 bucks and wired it into the line side of the power cord going into my heater element (from a Goodwill store sandwich grill).
Heater and sizer are mounted on a 1/4" aluminum plate, I drilled and tapped 2 more holes and mounted the thermo with 1/4-20 machine screws.
Testing over 2 hours with a Fluke laser thermo, it consistently held 125 degrees on the base of RCBS lubrisizer, just about ideal for Rooster red lube.
