View Full Version : Went goose hunting this morning

And got three. The first pic was taken just before I got yelled at for having dead geese on the kitchen floor. I didn't see what the problem was, It wasnt like i put them on the counter.

Nice! Don't overcook them. Medium rare, just like a steak. They will turn to leather if overcooked.

Nope 3 in my area. It depends on the flyway and zone. I hunted pacific flyway, north zone in NM.

Tomme my wife generally makes gumbo out of them. But you are right they turn into shoe leather if over cooked.

Another thing I like to do is chunk them up into bite size pieces and deep fry them real quick. It locks all the juices in. And real tender. Almost like chicken nuggets.

Good morning & Congradulations !
Grew up in Michigan and the Allegan gunpits were my first orientation to popping big wingers. But back then I used good old lead BB (for fox also) to bring them down..
Mom would stuf the goose breasts & parts into a turkey and bake -em that way.

Had my wife look at the picture. "Must be single."

She doesn't like the smell in her kitchen either.

Have yet to get a goose this season due to the warm weather.

Don't overlook goose stew either! There is absolutely *nothing* like the sound of 'em when they hit the ground close to the pit!!! (Live'ns things up when you got carcass artillery incoming.)

Good show!

Another way to cook them is to slice the breasts and marinate a day or two in Ken's Ranch style Dressing. Then grill them to medium rare and re-marinate in the Ken's. We save the legs/thighs over the course of the season and give them all to a Cajun buddy who makes a huge batch of goose gumbo for our annual eating-and-beer-drinking-blowout on the last day of the season. A dab of fille[sp] on top and whooo boy!

Sometimes I smoke a whole goose and use it to make goose veggie soup. The smoked meat gives it a great flavor. Use the carcass to make the stock, then cut up the meat and veggies into it.

Had the neighbor smoke the breast last fall, turned out very similar to venison.

Cobroller, I was almost single afterwards! We have been married twenty four years though, she will get over it. She is a saint.

Hamish, will give the stew a try. None of these came close to hitting me but one time I got ko'd by a greater sandhill crane. Ouch!

Gnoahhh, is that a commercial product or something our Ken came up with. Is it posted here somewhere?

Chambers, I have never smoked anything. It is on my bucket list for the summer. Thanks!

City lake about 1/2 mile from the back door has so many you can't see the water for them, but in city limits NO HUNTING, Swimming, Wadding, boating! Hear them coming and going and see them if I am outside, hundreds or more. Think I will go up north to Dumas as they have a Snow goose problem and have no limit, and the farmers hate them as they pull up the winter wheat.

I was fishing on the river the other evening and a gaggle of Canadas came a swimming up behind me. Probably about 20 I guess. Now a noxious pest here. You can 'harvest' them with anything shoulder launched, anytime.

Freight man, I am on a lease just south of you. Unfortunately there isn't enough water for the geese to come in.

Jeff, I'm jealous. I would have a freezer full.

"Ken's Ranch Dressing"- on the shelf in the grocery store. I don't think it's a regional thing. If it is, I apologize.

Good hunt! I like goose.
I have an old Norwegian friend, who hunted a lot of geese when he was younger (80, is 87 now) and made a lot of goose jerky. Good flavor and texture!

Yep. I would almost rather hunt waterfowl than go deer hunting anymore.
